Apple Pie Jam

Here is the recipe for the Apple Pie Jam I made yesterday.  I encourage you to give it a try, it is really yummy!

Apple Pie Jam

4 cups apples, chopped (tart apples, I use Granny Smith)

1 1/2 Tablespoons lemon juice

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

4 cups sugar

1 cup brown sugar, packed

1 (1 3/4 oz.) box of pectin

1 teaspoon butter

Measure apples in a 4 cup measuring cup.  Now add, in the same measuring cup, water to fill up to the 4 cup line (with the apples in it).

Add pectin, butter, spices, lemon juice.

Bring to a boil.

Add sugars and bring back to a full rolling boil.  Boil 1 minute.

Stir constantly

Remove from heat, skim off foam if needed

Ladle into hot jars leaving 1/4" headspace

Process in water bath for 10 minutes.

A couple of notes~ the apples need to be chopped pretty fine, I let the jam sit off of the heat for a couple of minutes before putting into hot jars, that seems to help the apples bits stay evenly distributed through the jam.  This makes about 7 half pint jars.

 

We are in for yet another big winter storm tomorrow.  Earlier they said 5-7 inches now they have changed our area to 2-4............that sounds better!

Strawberry is still in waiting............I will check her now before heading to bed, surely this storm will bring her into labor??

Progress is sometimes slow around here.............we purchased a nearly new dryer a little over a year ago at an auction.  We didn't need a dryer, our son did and it was a great deal ($50).  I called him to say we had gotten it for them, well someone had already given them one.  So we were the proud  owners of the dryer.  That was fine as ours is old and decided it would be fine to have the new one for ourselves.  A friend that has several rental houses wanted our old one, so that would work out great!  Well, the new one has been sitting in our garage all this time.  This afternoon I find Dh has moved the old one out and is in the process of moving the new one in...........WooHoo.  You just never know!  Now I just hope when I try it out tomorrow that it will work well.

I also have a set of clothesline poles hanging around waiting for a job to do too!!  Now the biggest problem there is that I can not decide where I want to put them?  I will have to make up my mind by spring as I would love to be able to use them!  We have so much dust from our gravel road, and I hate to think of all that dust on my clean laundry.
