Garden time & Oven fixed!

Great news!!  We planted potatoes and onions today in the garden!  Dh tilled it this morning and it worked up nicely.  He planted the potatoes and  I did the onions this afternoon.

We have some things planted in the greenhouse, but nothing is up yet.

I worked for my friend yesterday and will again tomorrow.  She also has two high school boys work for her some, they are out of school tomorrow and we will all work together to get her goats moved, wormed, shots etc. before they start kidding.

Gd has a school play  tomorrow night which we got tickets for.  Now we are waiting to see if the goats that are due today and tomorrow will kid or will one of us have to stay home???  Her brother is planning to come home with us afterwards to spend a couple of days, we haven't seen much of him since Christmas, so are looking forward to that!

I did some baking this afternoon for a lady in town and delivered it. Our oven heating unit had gone out a couple weeks ago, so I am glad she called to ask me to make some things for her..........that prompted us to call and order the part and get it fixed!  The part came in this morning, and Dh picked it up and replaced it just before lunch. While I was doing it I made some Morning Glory Muffins for me. They are so good and have a bunch of goodies in them.  I will post the recipe for you to try sometime.

Morning Glory Muffins

 

1 1/4 Cups Sugar          

 2 1/4 Cups  Flour    

    1 Tab. Cinnamon

2 tea. Baking Soda

1/2 tea. Salt 

8 oz. crushed pinapple, drained

 1/2 Cup Raisins                

1/2 Cup shredded Coconut  

 1 Apple, shredded                       

 2 Cups grated carrots

 1/2 Cup Pecans or Walnuts

 3 Eggs

 1 Cup Vegetable Oil

 1 tea. Vanilla

 

The dry mix:  Stir together sugar, flour, cinnamon, baking soda and salt into a large bowl.  Add fruit, carrots, and nuts.

The batter:  In a separate bowl, whisk eggs with oil and vanilla. Pour this mixture into the bowl with the dry ingredients.  Blend well.

Spoon batter into greased muffin tins or use baking papers.  Fill each cup about 3/4 full.  Bake in a preheated 350 degree oven for 35 minutes or until a toothpick comes out clean.  Cool in the pan for 10 minutes, turn out onto a rack to cool.  Makes 12 of the extra large muffins.

Note:  The flavor improves if muffins are allowed to ripen for 24 hours.  They freeze well.  Enjoy!
