Recipe and more babies!

Hay Hand Rolls

1 pkg. yeast

1 C. lukewarm water

   Combine.  Stir into:

1 Tab. salt

1 Tab. sugar

4 C. flour

pinch of ginger

3 C. tap water

Mix well and beat until bubbly.

Set sponge for several hours or overnight.

Add sponge to:

3 beaten eggs

1 C. sugar

1 C. melted shortening  (lukewarm)

Add enough flour to make a dough to knead (about 6 cups).  Knead well and place in greased bowl until double in bulk.  Knead down again and make into rolls.  Can be placed in refrigerator after kneading once, but knead down each day in refrigerator.  When ready to use, remove the desired portion and let stand at room temperature for 1 hour.  Make into rolls and put on a greased cooked sheet.  Rise to double.  Bake at 400 for 15-20 minutes.

For cinnamon rolls, prepare in the evening.  Make up as for any cinnamon roll.  Place in greased pan, cover and let stand until morning at room temperature.  Bake as above.

 

Just took the rolls out of the oven and boy does it smell good in the house right now!  I have the cinnamon rolls made and will bake them in the morning.  You wouldn't think they could sit out all night like the recipe says and not be all over the counter..........but it works and they are good!

For lunch today: Chicken fried steak, baked potato, fresh frozen corn, corn bread.

Finally got rid of a bunch of roosters today, found someone that wanted them to butcher.  I had 7 that hatched last spring and I had been feeding them way too long!  When I delivered them, got to visit with a friend I hadn't seen for a long time and had a cup of tea.  A nice break in the middle of the day.

As soon as I got home from her house, went straight to the barn and found a new baby!  Soon after another one arrived, both little doelings!  We are even so far with boys versus girls.

Nothing got done on finishing the closet today.

Hi Leslie;
Thanks for stopping by my blog :) The Cherry Pineapple Li'l smokies were a good hit! Everyone liked them. I added another package of lil smokies and another can of pineapple to the leftovers and we had for lunch the next day too. I bought melons for the pickles but my in-laws showed up and thought I would make a big fruit salad instead ;) I'll have to try that another day.

The sweetbread/ rolls recipe sounds easy! I think I'll make that for Sunday morning. Thanks for posting it!

Is the salt 1 tab?

Hi Marilyn! I'm mixing this up this morning, is the amount of salt really 1 tablespoon? So if I double it will be 2 full tablespoons of salt, sounds like a lot but then I don't make bread and rolls very often. Let me know!
