Here is the recipe I made yesterday.

 

Best Apple Pie Jam Recipe #100315

A friend gave me this wonderful recipe, and Oh my, it is so good. Just like a extra good apple pie filling, but in jam form. If you love apple pie, you are going to have to make this wonderful recipe. My husband who only likes strawberry jam, said, " this recipe was EXCELLENT!" It is excellent on english muffins, pancakes or toast. Even over Ice cream too!!

time to make 23 min 15 min prep

4 cups apples, chopped (tart Apples)
1 1/2 tablespoons lemon juice
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
4 cups sugar
1 cup brown sugar, packed
1 (1 3/4 ounce) box dry pectin
1 teaspoon butter

  1. measure apples in a measuring cup, now add in the same measuring cup water to fill up to the 4 Cup line (with the apples in it).
  2. Add pectin and the butter and spices, lemon juice.
  3. Bring to a boil.
  4. Add sugars and bring back to a full rolling boil, boil 1 minute.
  5. Stir Constantly.
  6. Remove from the heat.
  7. Skim off any foam.
  8. Ladle into hot jars.
  9. leaving 1/4".
  10. headspace.
  11. put on lids.
  12. Process in water bath 10 minutes.

My Notes:

Be sure you make note of measuring the water in the same measuring cup with the apples already in it, that is a little confusing. I read to let it cool a little, maybe a couple of minutes before filling the jars, that is supposed to help keep the apple bits from floating to the top of the jar.  I used the food processor to chop the apples as you want them in pretty small pieces, however be careful not to liquify them.  I used Granny Smith apples.  Enjoy!

 

We had another of my favorite meals at noon today, meatloaf and scalloped potatoes.  I make meatloaf and freeze it in the small disposable loaf pans.  That sure makes it handy when in a hurry.....or it just sounds good like today!  I will also share my potato recipe as I love it and it always turns out perfect!

 

 

Scalloped Potatoes

Heat: 2 cups milk

1 1/2 tea. salt

2 Tab. flour

Add: 2 tea. mustard

1 Tab. butter

1/2 cup diced onions

Add: 5 cups peeled and diced potatoes

Heat to boiling--stir often

Add 1 cup diced cheese (Velveeta)

Stir until melted

Pour into greased 1 1/2 qt baking dish

Bake at 350 for 45 minutes

 

This afternoon we took off for a drive and went to a town about 40 minutes from here.  We checked out a new farm store......always fun, the Dollar Store, and a Goodwill store we had not been in before.  Dh got 2 shirts and I got 2 sweaters there!  Just a nice afternoon, we didn't have anything we had to do or had to hurry home for.

 

I have added a Pregnancy countdown on here, this is for our Grandbaby that is preparing to arrive in June! We are excited, this is number 13........but who is counting??  Each and every one is  a special blessing from God!!  This tells me that ddil is half way there!

I will definately have to try that one. I have enjoyed reading your blogs. You are right about feeling right at home here . There is not much in common with the other women that I meet out in the world you might say but as soon as I found this group it was like a breath of fresh air.

Yes, this group is amazing, can you imagine making everyday conversation about canning, knitting, critters, etc with just anyone you meet? No! It is nice to know there are so many gals that feel the same way, I had no idea.
