My sister shared a recipe on her blog today for sausage links. We've already made them and WE LIKE! They seem like the oddest combination of ingredients, but altogether it's really good.
I am planning on tweaking the recipe a little. There's a slight sweetness from the dried cherries that I would like to mellow out. I think that my home dried cherries are sweeter than store bought, maybe.

The dried cherries make yours look better then mine. I might try dry cranberries. do you think that would be to sour?

Your post inspired me to try making vegan sausage this past weekend, I've been meaning to for a while. How easy and delicious! I'm tweaking my recipe too, because I don't like the taste of nutritional yeast. I'm working on creating an apple/potato/sage sausage. Thanks for the inspiration to get started!
