We are running low on pint jars so making use of the many quart jars I have. This spring my sister and I went to a garage sale and bought a few boxes of quart jars from a lady. Her neighbor asked us to please drive over to his garage and he proceeded to finish loading up the suburban with all his canning jars. His wife had died and he had no interest in canning anything. What a bonus! We've done 56 pints of apricot "jam". I just use a hand blender and blend the cots then add a bit of sugar - not much. I use insta-clear jel and freeze it. That's it.
So sweet and juicy.

I love seeing all your fresh food and canning, and recipes, etc, etc. What I wouldn't do for some of those apricots.... :) We live in the city right now with our small little MI garden. I say bless you. How beautiful you apricots are. I have 20 apricot trees but we froze out for the 2nd year in a row. I always try to can for 2 years ahead. Then if I get bounteous crops I give away lots of jam and start anew LOL. Have you tried Orange-Apricot Jam? oh yummm. I also can nectar, it is so good mixed with orange juice in the winter. In the summer I mix it with lemonade, or coolade. Then there is apricot syrup, pie............Oh I am getting carried away. Have fun. Many blessings Anne
