Homestead Kitchen Challenge
My menu for this evening is:
Pulled pork sandwiches (frozen half a pork loin) Salsa (in pantry) Beans (canned Texas Ranch Style) Salad w/h'made Italian dressing Peach cobbler (canned peaches) Lemonade ( I have that powdered kind that I need to get rid of)
Homestead Kitchen Challenge!I am joining my friend Patti over at Collins Country in her "Homestead Kitchen Challenge" This is for all of us that need to purge our pantry...a much need thing in my home!! Go on over to her blog to read the rules, but be sure to leave a comment for me that you have joined in this challenge so that I can visit your blog and hopefully get some great "purging" meal ideas! My first meal: Hawiian Honey Ham (ham has been in the freezer too long, can of pineapple and honey glaze) Can of green beans (w/balsalmic vinegar, and bacon...also been in the freezer too long) Wheat rice (mixed with a can of stewed tomatoes) Homemade wheat rolls For a bunch of purging items, this actually sounds very good to me...What have I been waiting for??? Thanks Patti! Feeding 17 people!I had to post that I am sooo pleased with myself! My friend just had her 8th little blessing, and our MOPS group likes to bring meals for the first few days, so it was my turn on Sunday. My DH flinched when I told him I would be feeding 17, including our family, a Lasagna dinner. Little did he know that my pinching pennies really pays off in situations like this. I made 2 9x13 lasagnas (a meat sauce using 3 lbs. ground beef), 2 large bowls of corn and peas, 2 salads, 2 garlic bread loafs and 5 dozen cowboy cookies...my grand total for this was a whopping $15.00 and that is rounding up! Just wanted to share that! Blessings, Rossie Breakfast...I am cutting out cereal from our breakfast choices!! On top of not being very healthy, my kids are always hungry an hour after having cereal for breakfast. The straw that broke the camel's back was yesterday. We ate breakfast at 7:00 and my daughter had piano practice at 8:00 and while we were at her piano teacher's home, DS5 bugged me the whole half hour that he was "soooo hungry". I informed him that we would have a snack when we got home, and he replied, "I will never make it, can't I look in Mrs. Haner's cupboard and see if she has something?" Huh...I'm so sure!! I know my children have a way of exagerating things, but this happens everytime we have cereal!!! I will stop being lazy and prepare my children good hearty breakfast every morning! I like to make extra pancakes and waffles, and put them in the freezer, so that is what I am going to do this morning. That way when we are in a hurry, we can still do our pop something in the toaster breakfast. But this way it is good stick to your ribs wheat pancakes and waffles! Does anyone else have some good hearty quick breakfast ideas for those in a hurry mornings? Blessings today! Rossie Menu for this week...
I am only doing a menu for one week, because next weekend I will be going to Sanfrancisco for 2 weeks. I am trying to use up what we already have, so a few of the meals are alterations of what we have reciently eaten, thankfully they are all favorites! Spagetti/Corn/Green Salad/HM Bread Salsa Chicken/White Rice/Pickled Tomatoes & Bell Peppers Meatloaf/Baked Potatoes/Green Salad Crock Pot Chicken/Carrots & Potatoes/HM Bread Bacon Wrapped Filets/Fried potatoes/Green Salad Hamburgers/Corn on the Cob/Pasta Salad BBQ meatballs/White Rice/Green Salad Today is kitchen day, so I will be making bread, and the kids and I are making brownies. Since I have been doing my 2 week grocery shopping, we have cut way back on the snack foods and junk foods, but I have noticed DH wandering around in the kitchen reciently looking for some sweets. So I thought brownies would be a nice suprise when he gets home! I am in need of indoor activities to do with small children. It has been around 110 degrees all week here and it is not wanting to let up. The air quality is also horrible here, so with 2 children having breating problems, it's not wise to have them outdoors! I am fast running out of things to keep them busy, and I refuse to allow the TV to be their babysitter! Any ideas would be wonderful! Hope you all have a wonderful week! Week#1 Steak/Potatoes Chicken/Broccoli BLT's Pulled Pork Sandwiches Shish Kabobs Week#2 Tunafish Casserole Chicken Alfredo Mini Pizzas Taco Bake Whole Chicken/Veggies Every week we have a breakfast night, and a leftover night, that is why I only plan for 5 meals. I started shopping every two weeks, and it has saved us on average $100 a week because I am able to buy more in bulk. Our new grocery budget is $300/month. I do have to go back in between for fruit, milk and bread, but usually I just have DH do that on his way back from work, that works out well!! |
