Bread and the Kitchen Aid

I got a Kitchen Aid from my wonderful Hubby for Christmas, and I was wondering if any of you fine ladies mix and knead your bread with it.  Is it better done by hand, and if the Kitchen Aid does work well, would you be so kind as to share recipes.  I tried to make bread rolls today, however, I did something wrong.  I don't know if I need to soak the yeast first still, or how long to run the mixer.  Anyhow, any advice would be wonderful!

Actually any recipes you use your Kitchen Aid for would be fantastic.  If you post them on your blog, just let me know!

I have a Kitchenaid stand mixer, and love it.

When I make bread, I use fresh milled wheat and a Breadbeckers Recipe. (I don't know if that makes a difference or not?) My batter is pretty 'wet' to start with.
I prepare the batter right in the mixer bowl.
I use the kneading hook attachment on my mixer and run the machine on high for 10 min.
BE CAREFUL......the mixer will jump right off the counter. Make sure you are standing close by!!

I have used my KA mixer to knead with the dough hook over the years for several kids of yeast bread. I am still just an occasional bread maker and don't have one recipe I stick to, but no matter what I've made, the mixer works great for kneading. I usually do it for four minutes or so, until the dough is nice and stretchy, then pull it out and finish it on the countertop b/c I like getting my hands into it.

Keep us posted on how it works out. On the yeast thing, sprinkle a little sugar into the warm water before you add the yeast and that will give it a nice breakfast before you start going.

I'll be taking a Bread Beckers class myself in a few weeks....if anything changes from above, I'll email you back! Denise B

last year! I love it. Though my bread didn't turn out well with it. It is not the Kitchen Aid it is me. I have no idea what I am doing. But I did successfully make bread yesterday using my bread machine for just making the dough! Then I transfered it to the pan. ;) LOL

The Window Test

Marilyn Moll with The Urban Homemaker uses/recommends "the window test" to tell if your bread has been kneaded long enough. Just stretch part of your dough out slowly up to the light--if you can see light before the dough tears, it has been kneaded long enough to develop the glutens and should rise well.
