Last week I looked in the fridge before I went grocery shopping to check our supply of milk. I seen only 1 1/2 gallons left so I bought 2 more gallons. UGH! When I got home I discovered that there was a gallon hiding in the back so I had more than enough. Plus I forgot that the girls were going off to camp for a week this week! DH & I hardly ever drink milk! I didn't want it to spoil so I pulled out a favorite recipe for Koolaid Sherbet! Now after making 2 ice cream pails of it I am now down to 1 gallon of milk! I think I'll make up some pudding & pudding pops with that.
I made a double batch of strawberry & a double batch of orange. I used up 8 pkgs. of koolaid mix in the process. We have an over abundance of koolaid lately since they have been on sale at 20/$2. I always stock up during the summer for the winter days ahead so I don't have to pay full price!

This Week's Menu w/ Recipes
Monday: Easiest Swiss Steak, rice, & green beans
Tuesday: Seasoned Chicken Breasts, seasoned potato wedges, tossed salad
Wednesday: Hamburgers, mac & cheese(from a box), & pork n' beans
Thursday: Ham, scalloped potatoes(Betty Crocker), peas
Friday: Homemade pizza
Saturday: Amish Roast Chicken & Potatoes w/ Garlic, homemade rolls
Sunday: Lunch: leftovers
Supper: Chicken salad sandwiches, Yummy Potato Peels
Easiest Swiss Steak
Cut up round steak into pieces about the size of a deck of cards and place in crockpot. Add a couple cans of stewed tomatoes. Put on lid, set on high and cook all day. If you wish, add some potatoes & let them cook all day as well.
Laine's Baked Potato Wedges
4 potatoes unpeeled & cut into wedges
4 T. olive oil
1 1/2 t. salt
3/4 t. pepper
1 t. garlic powder
1 t. rosemary (I use Italian seasoning b/c I don't have any rosemary!)
Toss together & place on cookie sheet. Bake @ 400* for 30-35 minutes, turn & bake 15-20 more minutes. Season with salt if needed.
Amish Roast Chicken & Potatoes w/ Garlic
1 roasting chicken, approx. 4 lbs.
ground thyme
1 large onion, cut into chunks
4 potatoes, cut into chunks
carrots, peeled & cut into chunks
garlic powder
1/2 c. (1 stick) butter
1 c. chicken broth
salt & pepper
Preheat oven to 425*. Rinse chicken. Place chicken breast side up in a shallow greased pan. Separate skin from the breast meat with fingers & sprinkle with thyme. Sprinkle more thyme inside cavity.
Scatter onions, potatoes, & carrots around chicken & sprinkle with garlic powder. In a measuring cup, heat butter & chicken stock together in microwave; pour over chicken & veggies. Add salt & pepper to chicken & veggies to taste.
Bake chicken for 30 minutes, then turn it over, back side up, & baste with pan juices. Lower heat to 350* & bake 20-30 minutes longer, basting occasionally, or until meat thermometer inserted into the thigh registers 180* & the potatoes are tender.
Remove from oven and, keeping it covered, allow it to rest for 10 minutes. Carve & serve with veggies and pan juices.
Homemade Dinner Rolls
Put in bread machine in order:
1 c. warm water
2 T. olive oil
3 T. brown sugar
1 t. salt
1 egg
3 c. bread flour
2 1/2 t. yeast
Hit dough cycle. Let rise in machine til doubled. Take dough out to floured counter, & using pizza cutter, cut dough in half. Then cut each half into 6 pieces. Then cut each piece into 3 pieces. You will end up with 36 pieces. Grease large muffin tin (12 muffins). Put 3 pieces in each section, then cover & let rise til doubled, about 30 minutes. Bake @ 375* for 15 minutes.
Yummy Potato Peels
Scrub potatoes & peel into large peels. Place peels in a bowl & add salt & pepper, garlic, & onion powder. Grease cookie sheet & place skins on sheet. Bake @ 400* for 8-10 minutes or til done. Remove from oven, sprinkle with grated cheese, then return to oven til cheese melts.

Saltine Chocolate Pieces

1 sleeve (about 37) saltine crackers
-
3/4 c. brown sugar
-
1 c. butter
-
12 oz. (2 cups) semi-sweet chocolate chips

3/4 c. chopped nuts *I used walnuts
Preheat oven to 400*F. Line a 10 X 15" cookie sheet with foil; spray very lightly with cooking spray. Cover cookie sheeet with saltines. Boil sugar and butter for 3 minutes. Pour mixture over saltines and spread evenly. Bake at 400* for 5 minutes. Remove from oven.
Sprinkle with chocolate chips. Let set 1 minute, then spread melted chips with spatula. Sprinkle 3/4 c. chopped nuts over this and press down lightly. Cut on diagonal immediately or cool until firm, then break up; pieces can be frozen.
Yields: 30 pieces

Pie Filling Delight

1-8 oz. Cool Whip
1-8 oz. pkg. cream cheese
1 c. sugar
1/2 t. vanilla
1 stick margarine
3 c. graham cracker crumbs
1 can pie filling (your choice)
1. Melt the margarine & mix with crumbs. Pan into 9 X 13" dish. **Save a few crumbs for topping!
2. Mix cream cheese, sugar, & vanilla until well beaten. Add Cool Whip.
3. Pour mixture on top of crumbs.
4. Pour pie filling over top Cool Whip mixture.
5. Sprinkle reserved crumbs on top.

Dirt Pudding
Our local library has a teen program that takes place on Thursdays @ 11. My oldest usually goes by herself because she doesn't want my youngest tagging along, although both are old enough to attend. But you know, you have to pick your battles, right?
Well, since the oldest is at camp I let the youngest go this week. They were having a movie/snack party. Everyone was supposed to bring a "buggy" snack and then they were going to watch a "buggy" movie. So yesterday morning I had to make a mad dash to Walmart to get the ingredients for her "buggy" snack. I made some dirt pudding for her to take along.
Here's the recipe:
Dirt Pudding
1 pkg. (4-serving size) vanilla instant pudding mix
1 pkg. (4-serving size) chocolate instant pudding mix
4 c. milk, divided
1 c. thawed Cool Whip, divided
Oreo cookies, crumbled
Gummy worms
1. Prepare vanilla & chocolate pudding mixes separately with milk as directed on packages.
2. Let stand 5 minutes.
3. Gently stir 1/2 c. Cool Whip into each bowl of pudding mix.
4. Sprinkle Oreo crumbs into bottom of bowl or bucket. Enough to cover bottom, about 1/2" thick.
5. Pour vanilla pudding mix over top of crumbs.
6. Sprinkle another 1/2" of Oreo crumbs over top of vanilla pudding.
7. Pour chocolate pudding mix over top of crumbs.
8. Sprinkle another 1/2" of Oreo crumbs over top of pudding.
9. Add worms & a shovel!
10. Refrigerate at least 1 hour before serving.
There were only 5 kids that showed up this week. Most likely because of it being the 4th of July weekend. Katie won a coupon to Arby's for "The Best Tasting"!
