How we can deer

We kind of just did a little "hope it turns out" type of recipe 2 years ago when we first canned a deer.  Thankfully it turned out wonderful.


What I do is cut the meat into chunks & sear it in a pan on a fairly high heat.  Then we drop the pieces into jars, add a quarter of an onion, and a good chunk of beef fat on the top, along with 1/2 t. of salt. 

Then comes the juice.  I mix 18 cups of water with 13 t. of beef boullion granules & 2T. worcestershire sauce.  Let that come to a boil and then ladle into jars leaving a 1" headspace.  Place in pressure cooker and process for  1 1/2 hours at 10 lbs. pressure.


When I want to make beef & noodles I just empty the jar into a saucepan, removing onion.  Mix in a can of cream of mushroom soup or two along with some salt & pepper.  Pour over noodles.  I always fix some green beans & french bread with this. 




Canning potatoes

Okay, I've never canned potatoes. Never even thought about doing it. Could you post a how-to?

I am so excited to share this with you.  I told my girls that I actually get to teach Sister Lori how to do something!  The girls asked where you lived, I told them, and they said that we could just go there & teach you.  LOL!!  They just loved visiting out there a few years back.  Maybe one day we will get to come out again.  I have gleaned so much knowledge from you & am blessed today to share this.  You are one of the ladies in my life that I look up to and look forward to learning from.

 

Peel potatoes & cut them into golf ball sized pieces.  Drop potato pieces into jars.  Add 1 teaspoon of salt to quarts or 1/2 teaspoon to pints.  Pour boiling water over top til full leaving 1" headspace.  Wipe rims & place lids & rings on.  Place in water bath canner & process for 1 1/2 hours.

We use these alot for mashed potatoes.  My friend at church also uses them to shred up for hashbrowns or you can slice them up to make fried potatoes.

~OOPS!  This entry has been updated.  Seems that I forgot to mention that you are to add 1 t. of salt to quarts & 1/2 t. of salt to pints!

Potatoes (to can)

  1. Peel potatoes
  2. Cut into wedges about the size of a golf ball
  3. Place wedges into jars and lightly shake to settle them a bit
  4. Add 1t. salt to quarts or 1/2t. salt to pints
  5. Pour boiling water over top leaving 1" headspace
  6. Process for 1 1/2 hours in hot-water bath

A 50# bag will get about 35-37 quarts.

 

 

 




Crockpot Apple Butter

7c. applesauce, preferably homemade, but a good-quality commercial kind (unsweetened) can be substituted

2c. apple cider (I use apple juice)

1 1/2c. honey

1t. ground cinnamon

1/2t. ground cloves

1/2t. ground allspice

 

In a crockpot, mix all the ingredients.  Cover & cook on low heat for 14-15 hours, or until the mixture is a deep brown.  Pack while hot into 4 pint jars.  Process in a hot-water bath for 10 minutes, counting the time after the jars have been immersed and the water comes again to a rolling boil.

 

 

 

 

 

 

 

 

 

 

 

 




Vegetable Soup (to can)

I've been canning soup today. So far I've canned 18 1/2 quarts.

 

2 lbs. cooked hamburger

2c. chopped onion

6 cans (14.5 oz.) mixed vegetables

3 cans (29oz.) tomato sauce

3 cans (29oz.) water

1 qt. beef broth (I put 2 beef boullion cubes in a qt. of hot water)

1c. sugar

1T. chili powder

2t. salt

2t. pepper

Mix all together.  Heat over medium heat til warm.  Ladle into jars, wipe rims and place lids on and tighten.  Process in water-bath for 2 hours.

 

Yields: About 9 quarts
