How we can deer
We kind of just did a little "hope it turns out" type of recipe 2 years ago when we first canned a deer. Thankfully it turned out wonderful.
What I do is cut the meat into chunks & sear it in a pan on a fairly high heat. Then we drop the pieces into jars, add a quarter of an onion, and a good chunk of beef fat on the top, along with 1/2 t. of salt.
Then comes the juice. I mix 18 cups of water with 13 t. of beef boullion granules & 2T. worcestershire sauce. Let that come to a boil and then ladle into jars leaving a 1" headspace. Place in pressure cooker and process for 1 1/2 hours at 10 lbs. pressure.
When I want to make beef & noodles I just empty the jar into a saucepan, removing onion. Mix in a can of cream of mushroom soup or two along with some salt & pepper. Pour over noodles. I always fix some green beans & french bread with this.
