Q. Blessings!
I am so excited to share this with you. I told my girls that I actually get to teach Sister Lori how to do something! The girls asked where you lived, I told them, and they said that we could just go there & teach you. LOL!! They just loved visiting out there a few years back. Maybe one day we will get to come out again. I have gleaned so much knowledge from you & am blessed today to share this. You are one of the ladies in my life that I look up to and look forward to learning from.
Peel potatoes & cut them into golf ball sized pieces. Drop potato pieces into jars. Add 1 teaspoon of salt to quarts or 1/2 teaspoon to pints. Pour boiling water over top til full leaving 1" headspace. Wipe rims & place lids & rings on. Place in water bath canner & process for 1 1/2 hours. We use these alot for mashed potatoes. My friend at church also uses them to shred up for hashbrowns or you can slice them up to make fried potatoes. Enjoy!
~OOPS! This entry has been updated. Seems that I forgot to mention that you are to add 1 t. of salt to quarts & 1/2 t. of salt to pints! Sorry if I brought you any confusion!! LOL!!
