Potatoes (to can)
- Peel potatoes
- Cut into wedges about the size of a golf ball
- Place wedges into jars and lightly shake to settle them a bit
- Add 1t. salt to quarts or 1/2t. salt to pints
- Pour boiling water over top leaving 1" headspace
- Process for 1 1/2 hours in hot-water bath
A 50# bag will get about 35-37 quarts.

I didn't know you can can potatoes. Wow I am going to do this!! Can I put them in my pressure cooker? That is what you mean by hot water bath right?

This is a recipe for botulism. Potatoes are a low-acid food and should always be canned in a pressure canner at the recommended times and pressure. If these potatoes were not cooked properly after they were opened, or if a child were to get some of the liquid on their fingers and lick their fingers, someone could get very sick or die from botulism. I know it is not always present, but there is always danger!
