Here is a recipe for dough enhancer in case you can't find it ready made at the store.  I've made it without the lecithin as well as with it.  It does work better with the lecithin, but if you can't find it it will still work.

1 c. lecithin powder
1 c. powdered milk
1 T. ginger
1 T. pectin (like you can jellies with)
1 T. fruit fresh
1 T. cornstarch

Mix all together in a small bowl and store in a pint jar.  It keeps well.

Do you need to use less of this for white bread than whole wheat?
Also, what is the real salt in the bread recipe?

If you are using all white flour, you may not need dough enhancer or gluten at all. Wheat flour takes a little boosting to get it to rise nicely and develop the gluten fully.
I've never made it with all white flour, though, so try it and post your results.

I use sea salt in place of real salt...I assume it is a salt without any additives.
