Amish Broccoli Dish from Beverly Lewis Cookbook2 10 oz. bags frozen chopped broccoli (I like using 1 bag broccoli and 1 bag cauliflower)4 oz. Velveeta cheese 1 10.75 oz. can cream of mushroom soup 1/2 tsp. salt 2 cups crushed croutons 5 Tbsp. melted butter Boil and drain broccoli. Cream together cheese and cream of mushroom soup; mix in broccoli and salt. Place in greased 3 qt. casserole dish. Mix croutons and melted butter together and pour evenly on top of casserole. Bake at 350 degrees for 20 minutes. My family loves this so much that I have to double up the recipe. Breakfast TreatSince this recipe uses a lot of sugar and butter, I do not make it that often. I did make it the other day for my children and just forgot how good it was since it has been awhile. But if you feel like treating your kids in the morning, whip them up some Baked Oatmeal with Dutch Honey. Hint: Double up recipe for big family.Baked Oatmeal 1/2 cup butter 3 cups oatmeal (either regular or quick) 1/2 tsp. salt 1/2 cup brown sugar 2 tsp. baking powder 2 eggs 1 cup milk Mix together. Bake at 350 for 45 minutes. Serve with milk and dutch honey. Makes 8 x 8 pan. Dutch Honey 1 cup brown sugar 1/2 cup butter 1/2 cup evaporated or regular milk 1/2 tsp. vanilla Heat until almost boiling. DO NOT boil as the milk will curdle. Sugar Free Kettle CornWhile my girlfriend was here she showed me a few things to snack on that were a little more healthy. I have been eating this kettle corn like it is going out of style!In large pot, cook up some regular style corn (I prefer white). When finished popping, sprinkle with two tablespoons Splenda or Steevia (if you can afford it). Salt to taste and enjoy! Mmm Mmm GoodWhen I got ready to prepare what I thought I was going to make for dinner tonight, I realized I was missing some ingredients. So I had to improvise which I do not do very often. Well I really enjoyed what I came up with tonight and so did my whole family...yes my children too. Here goes:2 lbs hamburger (I use half hamburger and half ground turkey to save $) 1 cup diced green pepper (in my freezer from garden already diced) 1 half of a medium oinion diced Brown this together and drain. Then add 2 cans tomato soup or 1 family sized, 1/2 quart of tomato juice (canned from my garden), 1 quart diced tomatoes (canned from my garden), 2 tbsp minced garlic, 1 tsp garlic salt, 1 tsp soul seasoning, 1/2 tsp season salt, pepper to taste. Simmer over low for about 15 minutes. Serve over elbow macaroni noodles. Homemade White Bread-6 LoavesI am not one for a bread machine. I do not think you get a good loaf of bread out of them things no matter how many recipes you try. I have been making this bread for years now and my family loves it. Even though I know that wheat bread is better for you...we love this bread also and make it as healthy as possible. It is very soft and scrumptious! And it is sooo easy to make especially for a beginner. Freezes well too!6 cups lukewarm water 4 T. yeast 1 cup sugar or sucanat 3 T. salt 1 cup oil (I use vegetable but you can use what your prefer) 5 lbs. unbleached bread flour (as unprocessed as possible) In large mixing bowl, mix the water, yeast and sugar until yeast is dissolved then add remaining ingredients. Use enough flour to clean bowl sides. You do not have to do a lot of kneading, just enough to mix it thoroughly. Let rise for 1 hour in bowl. Punch down and knead slightly again. Moisten bread pans with oil or non stick spray. Shape dough into loaves and let rise in pans until desired size. Bake at 350 degrees for 20-30 minutes depending on your stove. This bread cost about 33 cents a loaf to make (which is now even cheaper than Aldi's) if you buy in bulk the flour, oil, and yeast. |
