Homemade Lowfat Tater Soup

Start out with clean diced potatoesAdd them to a big cooking pan and add 1 bay leaf and a package of Knorr Vegetable mix.

While this is simmering, chop carrotts, mushrooms, onions and dice up lean ham chunks.

Add carrots, mushrooms and small amount of onion to pot mix.Let boil until vegetables are soft.

Then add a can of fat free evaporated milk and 2 cans cream of mushroom soup and ham. Allow to thicken up and remove bay leaf.

This makes quite a bit for left overs so add amount of ingredients that suit your needs. Here is what the finished product looks like.

Yum,Yum,wish you could smell it. Perfect comfort food and low in fat.

Have a great day !!!

Hugs,

Rachel
