How NOT to get sick or spread sickess.........

1. Don't use the hand rail leading into the doctors office, don't use the door handle to open the door to the office, don't use the pen to sign in, or the pen on the counter to sign your check (use your own pen), and don't look at any magazines at the dr's office. If you do......go at once and wash your hands with an alcohol based product. All of these things are handled by hundereds of sick people each week. A lot of virus' can live for HOURS on each one of these things mentioned.

2. Sneeze or cough into you arm pit, and hold your face there for 5 full seconds after you sneeze or cough. This keeps the germs from flying all around. It also identifies you as a 'sick person' so people who don't want to get sick can 'be aware'. If your a feeling this poorly, you should stay home.

3. Keep hand sanitizer in your pocket. Especially this time of year. Every time you shake someone's hand, make a conscience effort to NOT touch your face with that hand, until you have had the chance to sanitize your hands. If you are the sick one......stay home.

4. Change your air filter at home, and throughly clean your cold air returns. Dust off your ceiling fans, and any thing else that needs dusted. Vacuum daily. Sweep vinyl and hardwoods daily. Change bed linens every 4 days. Change bath towels every other day and wash both the linens and towels with bleach.  Wash down the bathroom and all door handles in the house with bleach at least once a week. Door handles, maybe twice. Open windows when you can....even a crack and even for a few min. Help the air. Indoor plants help too.

5. Don't go to work if you are sick. Don't send your kids to school or daycare. Don't go to church. Don't go out to dinner. I know you're sick of being stuck in the house, but have mercy on the rest of us who really don't want your sickness. Remember how miserable you felt? How much your head hurt? Your stomach? I promise you......if you go out, you will spread your germs, and someone with a compromised immune system, someone who is older, someone who is under 1, someone who is just getting over a virus, or it could be someone who is usually healthy as a horse but your virus is super nasty, and it makes them sick too!!
Not cool. Just stay home. Please.

6. If you get sick. Water, lots and lots of water. Eat when you can, and make sure it's 'good food' not chips and cookies! You body need fuel to fight whatever thing you have caught.

7. When you go to the grocery, don't touch the cart and if you do, sanitize your hands. For heavens sake, don't let your baby touch the cart with his mouth!!! People sneeze and cough in their hands, then grab that cart and shop on. Gross!! If you go to a pharmacy to pick up a prescription, go to one that has a drive through. Avoid going inside at all cost. If you do go in, don't touch anything, and go stand down an isle by your self and make them call you when they are done.......

8. Change tooth brushes weekly while you are ill and for the next 3-4 weeks after you feel well.

What is it about the sunshine!

First, Thank You Lord, for the sun yesterday........it was wonderful!

The sun came out mid morning yesterday. It was bitter cold, but the sun was shining....
I ripped open the curtains on all of my southern windows and let it pour in. After that, here's what I accomplished:

I finished the laundry, cleaned the kitchen, started dinner, cleaned out the fridge, cleaning the dining room (stacks of stuff on the table, all put away) cleaning my office (ditto) cleaning the living room, dusted, vacuumed, picked up, organized. Ran to the grocery and picked up a few things for dinner. Got the mail, sorted and trashed the mail. Cut 3 videos and sorted and organized my tapes up stairs next to the new machine. Read my BSF notes, looked thru 2 seed catalogs, called the library put a book on hold, called the hotel and canceled my room, called a college to ask for information...called my dh to see how his day was going.

I just got a ton ton ton of things done! ALL of these things were taken care of on the south side of my house. The girls room was on my list yesterday, but there was no sun in there, so I didn't get it done.

I am Johnny Energy when the sun is out. And Sister Sloth when it's not. Why is that??

Hydrogenation...........is it the devil? ENTRY 3

Hydrogenation:

This is the process that turns polyunsaturates, normally liquid at room temp. into fats that are solid at room temp......margarine,and shortening. To produce them, manufactures begin with the cheapest oils---soy, corn, cottonseed, or canola, already rancid from the extraction process ---and mix them with tiny metal particles----usually nickel oxide. The oil with its nickel catalyst is then subjected to hydrogen gas in a high-pressure, high-temperature reactor. Next, soap-like emulsifiers and starch are squeezed into the mixture to give it better consistency; the oil is yet again subjected to high temps when it is steam cleaned. This removes the unpleasant order. Margarine's natural color, an unappetizing grey, is removed by bleach. Dyes and strong flavors must then be added to make it resemble butter. Finally, the mixture is compressed and packaged into blocks or tubs and sold as a 'health food'.
Partially hydrongenated margarines and shortenings are even worse for you than the highly refined vegetable oils from which they are made because of the chemical changes that occur during the hydrongenation process. Under high temps, the nickel catalyst causes the hydrogen atoms to change position on the fatty acid chain. Before hydrongenation, pairs of hydrogen atoms occur together on the chain, causing the chain to bend slightly and creating a concentration of electrons at the site of the double bond. This is called the CIS formation teh configuration most commonly found in nature. With hydrogenation, one hydrogen atom of the pair is moved to the other side so that the molecule straightens. This is called the "trans" formation, rarely found in nature. Most of these man-made "trans" fats are toxins to the body, but unfortunately your digestive system doesn't recognize them as such. Instead of eliminating them, your body incorporates "trans" fats into the cell membranes as though they were CIS fats---your cells actually become partially hydrogenated!!! Once in place, "trans" fatty acids wreak havoc with cell metabloism because arrangements or patterns, which the hydrogenation process has disturbed.

During the 1940's researches found a strong correlation between cancer and the consumption of fat--the fats used were  hydrogenated fats although the results were presented as though the culprit were saturated fats. In fact, until recently saturated fats were usually lumped together with "trans" fats in the various US data bases that researchers used to correlate dietary trends with disease conditions. Thus, natural saturated fats were tarred with the black brush of unnatural hydrogenated vegetable oils!

Altered partially hydrongenated fats made from veggie oils actually block utilization of essential fatty acids, causing many deleterious effects including: sexual dysfunction, increased blood cholesterol, and paralysis of the immune system. Consumption of the hydrogenated fats is associated with a host of other serious diseases, not only cancer....but also atherosclerosis, diabetes, obesity, immune system dysfunctions, low-birth-weight babies, birth defects, decreased visual acuity, sterility, difficulty in lactation, and problems with bones and tendons. YET hydrongenated fats continue to be promoted as health foods. The popularity of margarine and shortening over butter represents a triumph of advertising duplicity over common sense. Your best defense is to avoid them like the plague.

Saturated Fats, a continuation.........ENTRY 2

A continuation from a previous blog.....

The demonized saturated fats--which Americans are trying to avoid-- are NOT the cause of our modern diseases. In fact, they play many important roles in the body chemistry.

***Saturated fatty acids constitute at least 50% of the cell membranes, giving them necessary stiffness and integrity so they can function properly.

***They play a vital role in the health of our bones. For calcium to be effectively incorporated into the skeletal structure, at least 50%  of the dietary fats should be saturated.

***They lower Lp(a), a substance in the blood that indicated proneness to heart disease.

***They protect the liver from alcohol and other toxins, such as Tylenol.

***They enhance the immune system.

***They are needed for the proper utilization of essential fatty acids. Elongated omega-3 fatty acids are better retained in the tissues when the diet is rich in saturated fats.

***Saturated 18-carbon stearic acid and 16-carbon palmitic acid are the preferred foods for the heart, which is why the fat around the heart muscle is highly saturated. The heart draws on this reserve of fat in times of stress.

***Short and medium chained saturated fatty acids have important antimicrobial properties. They protect us against harmful microorganisms in the digestive tract.

Fats. An excerpt from Nourshing Traditions ENTRY 1

This is an excerpt from Nourishing Traditions  by Sally Fallon. The first 75 pages of this book has wonderful information.

Fatty acids are classified in the following way:

** Saturated: A fatty acid is saturated when all available carbon bonds are occupied by a hydrogen atom. They are highly stable, because all the carbon-atom linkages are filled--or saturated--with hydrogen. This means that tey do not normally go rancid, even when heated for cooking purposes. They are straight in form and hence pack together easily, so that they form a solid or semisolid fat at room temp. Saturated fatty acids are found mostly in animal fats and tropical oils, and your body also makes them from carbohydrates.

**Monounsaturated: Monounsaturated fatty acids have one double bond in the form of two carbon atoms double bonded to each other and therefore lack two hydrogen atoms. Your body makes monounsaturated fatty acids from saturated fatty acids and uses them in many ways. MUS (monounsaturated) fats have a kink or bend at the position of the double bond so that they do not pack together as easily as saturated fats and therefore tend to be liquid at room temp. Like saturated fats, however, they are relatively stable. They do not go rancid easily and hence can be used in cooking. The MUS fatty acid most commonly found in our food is oleic acid, the main component of olive oil, a well as the oils from almonds, pecans, cashews, peanuts and avocados.

**Polyunsaturated: PUS (polyunsaturated) fatty acids have 2 or more pairs of double bonds and therefore lack four or more hydrogen atoms. The two PUS fatty acids found most frequently in our foods are double unsaturated linoleic acid, with two double bonds--also called omega 6 and triple unsaturated linolenic acid with three double bonds--also called omega 3. (The omega number indicates the position of the first double bond) Your body cannot make these fatty acids and hence they are called "essential". We must obtain our essential fatty acids or EFA's from the foods we eat. PUS fatty acids have kinks or turns at the position of the double bond and hence do not pack together easily. They remain liquid even when refrigerated. The unpaired electrons at the double bonds make these oils highly reactive. They go rancid easily, particularly omega 3 linolenic acid and must be treated with care. PUS oils should never be heated or used in cooking. In nature, PUS fatty acids are usually found in the cis form, which means that both hydrogen atoms at the double bond are on the same side.

This is kind of "technical" but......it helps you to understand later pages in this book. Amazing information. I will post more later!!

Healthy Eating!

We have changed a few things in our diet over the last year, and it has worked out very well.

Our main oil now is virgin coconut oil. We never used margarine, so real butter is all we use. We have eliminated boxed foods....no more mac and cheese / boxed rice / boxed potatoes / boxed dinners. We never ate frozen stuff, so no need to eliminate there!

Here's what I found:
My kids don't care for the taste of 'fast food' (McD's / Wendys) or 'dining out'(Outback / Olive Garden) like they used too. They would rather come home to eat.
My dh, has not gained any weight this year, and has actually lost weight. With us eliminating a ton of salt and additives (that's in boxed and canned foods) I think we have kept his hereditary high blood pressure at bay! Praise the Lord.
I have found that my face doesn't break out as much.

We don't have weight issues in our family......the kids and I are extremely blessed with high metabolisms...but just by switching our oils and eliminating a few things, we are more 'active'. We are not 'sluggish, and run down'.
