Ginger Chicken
Makes 6 servings
1/2 cup mango chutney or orange marmalade
1/4 cup chilli sauce
2 T quick-cooking tapioca
1 1/2 tsps grated fresh ginger or 1/2 tsp ground ginger
12 chicken thighs, skinned (about 4 pounds)
Hot cooked brown ricec (optional)
sliced green onion (optional)
Cut up any large pieces of the fruit in the chutney. In a 4-5 quart slow cooker, combine chutney, chilli sauce, tapioca, and ginger. Add chicken, turning pieces in mixture to coat.
Cover and cook on LOW for 5-6 hours, or on HIGH for 2 1/2 -3 hours. If desired serve with hot brown rice and garnish with sliced green onions. |
