It Works for Me!!

 

What works for me is cooking twice and eating once.  I have heard some call is "morphing meals"  If I am having chicken twice in the same week as we are this week (Chicken Enchiladas tonight and South of the Border Chicken Soup later on in the week) and they both asked for shredded chicken, why not boil and shred it once, instead of wasting my time doing it twice????  If I am baking BBQ chicken one night, I might make a few extra pieces, and then make BBQ chicken pizza on another night.

I also like to brown several pounds of hamburger with onions, bag it in 2 cup portions and freeze them for later use.  It makes spaghetti, BBQ Beef Sandwiches, and several other dishes easier to make when I already have the hamburger browned.

I like to make meatloaf in muffin tins and freeze the leftover uneaten mini meatloafs for a quick supper later.  Simply spray the pan and the mini meatloafs slide right out.

Do any of you have any cook it once, eat it twice ideas to share with me????  What are some of your favorite recipes to use with these morphing meals????

Thanks for stopping by my place earlier...I love your idea of individual meatloafs. I like cooking a whole chicken in the crockpot and then we usually get about 3 meals for us.

I cook a large pot of chilli and cornbread first nite, second nite we have baked potatoes and chilli with the works with a salad . The third night we would have hot dogs and chilli ,with a vegs,and side dish. This is food I cook for the winter time . I also bake extra chicken when I bake it ,and the next nite I use the chicken for fajitas or jambalaya. Hope this helps ,Shaune

MMmmm...your meals sound great!
We cook a pressure cook a chicken, use the broth for noodles or rice, and we use the chicken for chicken salad or just to eat plain.
We also bake chicken in butter and we put rice in the broth that it makes. It is really good!
We sometimes get hambruger and fry half of it for hamburgers with bbq sauce and the other half for taco salad.
There are so many dishes that you can make with chicken!

...is to freeze leftover soup stock in ice cube trays. When I next use it, I just put a few cubes in the pot without having to worry about defrosting. You can even freeze some minced parsley in the cubes, too.
