Chicken Taco Bake

Chicken Taco Bake

(servesn 4)

2 cups coarsely crushed corn chips

1 can (16 oz) refried beans

2 cups (8 oz) shredded Monterey Jack cheese

1 cup salsa

2 cups shredded cooked chicken

1 tsp taco seasoning

1 medium tomato, chopped

Place cornships in a greased 2 1/2 quart b aking dish.  Heat refried beans and stir in 1 cup cheese and salsa.  Spread over the cornchips.  Toss chicken with taco seasoning and sprinkle over beans.  Top with remaining cheese and bake uncovered for 25-30 minutes at 400 degrees.  Sprinkle with tomato after taking out of the oven and serve.

this sounds yummy. I'll have to try it. I'm always looking for a recipe to use my broken corn chips in. Thanks for the encouragement about my ticket. I feel better. Mine wasn't 125.00. It was only 51.00. I was afraid it would be more my hubby's last one was 75.00 I thought. Thanks for sharing the recipe. Abi

Perfect for busy days. I do a variation on this with ground beef and it's just as tasty. It's my "wash day" casserole for days when I'm so busy with laundry and just need something no-nonsense for supper.
