Lemon Chicken
(serves 4)
4 skinless, boneless chicken breast halves
3T flour
2 T butter
2 T olive oil
1 3/4 cups chicken broth
1/4 cup lemon juice
salt and pepper to taste
Pound chicken breasts to 1/2" thickness. Dredge lightly in flour, reserving excess flour. Melt butter and olive oil over medium-high heat until it sizzles. Cook chicken 4-5 minutes, turning once, until chicken is done adn juices are clear. Remove chicken and keep warm. Stir flour into pan and cook 2 minutes. Whick in broth and lemon juice; heating to boiling and let thicken. Return chicken to pan and heat through. Season with salt and pepper. |
