Thankful Tuesday.............

I am so thankful that the Lord takes care of all our needs.  Things have been tight here financially, as I am sure many of you understand, but today DH told me he was going to be late coming home today because he has an extra job tonight.  He works in the internet department for the city and they have asked him to climb a tower to replace a internet dish or something.  Geez, I don't have to understand it to know that means more money in our pockets.  LOL  Now maybe we will have the extra money to pay for that speeding ticket DH got on the way to work the other day.  LOL 

Today I have to clean the kitchen, run one load of laundry (it was all caught up Sautruday, but now I have one load worth accumulated), dust, straighten up the dining room table, and clean a bathroom or two.  If I have time, I want to make some cookies for DH to take to work also.

Tonight for supper is a new recipe I found and thought I would share with you.

Pork Chops and Cumin Rice  (I love cumin!!)

4 bone in pork chops (about 3/4" thick)

1/2 tsp each: salt and pepper

2 T vegetable oil or olive oil

2 tsps chicken bouillon granules

2 cups hot water

1 cup uncooked long grain rice

4 T chopped onion

4 tsps Worchestershire sauce ( I can't pronounce it, but I can write it!! LOL)

1 tsp ground cumin (or more for my taste)

 

Sprinkle pork chops with salt and petter and brown in oil for 2-3 minutes on each side.  Remove and keep warm.  Dissolve bouillon in water (or use 2 cups of broth like i will most likely do!!), and pour into skillet and stir gently to loosen the brown bits.  Place rice in a baking dish.  Stir in remaining ingredients to skillet and replace pork chops to heat.  Place pork chops over the rice and pour sauce over all.  Cover and bake at 350 degrees for 15-20 minutes or until done.

 

I will let you know tomorrow if the family liked it or not!

This sounds sooo good! I'm especially wondering about the rice. I love cumin also!! Can't wait to hear what everyone thought!


~~~OK, Sarah and I loved the rice, but decided we would pump up the cumin next time. LOL DH doesn't like rice at all, and wouldn't even try one spoonful for us. LOL He did comment on how yummy the porkchops were though, so all in all, it was a hit here!
