Here I am again.........

I wasn't able to post yesterday, so let me fill you in on the weekend happenings.  Saturday, Sarah went shopping and hanging out with her sister who is married and lives across town, so DH and I went to Super Wally-World to buy groceries for the next two weeks (or more).  We decided to eat lunch before we went, and had a great time, just me, hubby, and the baby (15 months old).  We love Sarah, and things are going smoother with her living with us (she is our adopted 20 year old college student for the year.  She will move into the dorms on the 25th of this month.) , but DH and I haven't had much time alone without her and it was very much appreciated and enjoyed.  Sunday we attended church and then came home to work on my new pantry.  We have some beautiful wooden built in cabinets on the back porch just behind my kitchen that I have wanted to turn into a pantry for some time because my cabinets in the kitchen have no rhyme or reason to them and lots of lost space in the corners, etc.  I think they were probably built with the house in 1910 or something and I hate them, but we don't have the money or time for a remodel!!!!  DH helped alot in moving everything, getting it organized and was happy to find that I only needed about half of the space for my panty and the rest he can have for his storage and tools! LOL  Then we went on to the next project.........cleaning the carpet in the front room.  We borrowed a carpet cleaner from my sister in law and DH did a great job getting most of those little stains that Noah's sippy cup leaves on the floor. 

I had my menu for the week all planned out, and then realized I had an appointment I had to work around, so those nights I will make a casserole which is much easier to leave in the oven and have Sarah or DH watch until it is ready than 3 things on the stove and bread in the oven.  LOL  So last night, on the altered menu was Chicken Parigiana and everyone was looking so forward to it.  The orginal recipe I used to make came from momma25js, my GF for the last oh, 25 years I think.....but I altered it some because all the butter was sooooo fattening.....but oh so good. lol

Here is the recipe for the chicken and the sauce I served over it.  YUMMO!!! 

Chicken Parmigiana  (this serves 2, so double or triple, etc as needed)

1 small onion, chopped

4 garlic cloves, minced

1 T olive oil

1 can (15 oz) tomato sauce

1 can (14 1/2 oz) stewed tomatoes, cut up

1 tsp each: basil, oregano, and thyme

1/4 tsp pepper

1/4 cup milk

1/2 cup flour

1 egg, slightly beaten

1/4 cup seasoned breadcrumbs

1/4 cup grated parmesan cheese (out of a can is just fine too!)

2 boneless, skinless chicken breasts

2 T butter

1/2 cup low-fat shredded mozerella cheese

cooked pasta

Saute' onion adn garlic in olive oil until tender.  Add tomatoes, herbs, pepper and tomato sauce.  Bring to a boil, reduce heat and simmer for 20 minutes.

Meanwhile, place milk, egg, and flour in 3 separate shallow dishes.  Combine breadcrumbs and parmesan cheese in another shallow dish.  Dip chicken in milk, roll in flour, dip in eff and then coat in breadcrumb mixture.  Brown chicken in butter over medium heat until golden brown and juices run clear.  Sprinkle with mozerelaa cheese and cook until melted.  Serve over pasta and serve with sauce.

SIDE NOTE:  I browned my chicken breasts, then placed then in a small baking dish with a small amount of water and cooked them the rest of the time in a hot oven and kept them warm there while I was baking my garlic bread, boiling pasta and steaming the broccoli.
