Cake Mix Cinnamon Rolls

I recently found this recipe in our local paper in an artical about B&B's in Illinois.  I tried it this morning with wonderful results.  I have never seen a recipe of this nautre that uses a cake mix. 

Dreamy Cinnamon Rolls

 

1 Box French Vanilla Cake Mix

5 to 6 Cups Flour

2 Packages yeast

1 teaspoon salt

2 1/2 cups warm water

1/4 soft butter

3/4 cup sugar

1 tablespoon cinnamon

1 1/3 packed brown sugar

1 cup butter

1 cup cron syrup

1 1/2 cups walnuts or pecans

 

Combine dry cake mix, 2 cups flour, yeast and salt in a large mixing bowl.  Add water and beat with a electric mixer on low till combined.  Then beat on high for 3 minutes.

Stir in as much remaining flour as you can with a wooden spoon, turn dough onto a floured surface and knead in enough of the remaining flour to make a smooth dough ( about 3  minutes)

Palce the dough in a large greased bowl, cover and let rise in a warm place until doubled in size (about 1 hour)

Punch down and divide in half.  Cover and rest for 10 minutes.  Roll each portion to form a 16 by 9 rectangle.  Spread each rectangle with half of the 1/4 cup butter and sprinkle with a mixture sugar and cinnamon.  Roll and cut into 1 inch slices and set aside.

Combine brown sugar, 1 cup butter and syrup in a sauce pan.  Bring to a boil.  Remove from heat and divde mixture between two 9 by 13 pans.  Sprinkle nuts into the pan and plave half of the rolls in each baking pan.  Refrigerate for 8 hours or over night.

Remove rolls and let stand at room temp for 30 minutes.  Bake at 350 for 25 minutes.  Let cool 10 minutes on a wire rack.  Can be frozen up to 3 months.

I've never heard of using a cake mix either..I just have a plain mix here I will try it..I don't like to use mixes only if I'm in a pinch but this sounds really good.. haflinger
