Rose Hip Spread

Here is a fun recipe that I came across today.  I can't wait to try this one!

Fill a jar two thirds of the way with dried rose hips.  Cover the hips with apple juice and leave some space at the top of the jar to allow for some expansion.  Add a cinnamon stick, a few cloves, some citrus peel and leave the jar sit for 8 hours.  Remove the spices and peels and add some raw honey to taste.  Keep this refrigerated.  You can use the spread for toast or on crackers.  Yummy!

Rose hips are very nutritious and high in vitamin C.  They make a wonderful addition to winter diets and can help fight off an illness by boosting the immune system.  A tea made with dried rose hips, hibiscus, and lemongrass is delicious and fruity!  It is a vitamin packed drink that is enjoyed by children, as well as adults.  It can be taken hot or cold and can also be sweetened with a pinch of stevia or honey.

Dried rose hips are not expensive and can be found at health food stores or online.
