First Day (Ok, Second) of teh New Year...and Eggs in the Hole

Good Morning!

Oh, yesterday was so much fun!  Daniel's dinner was just delicious!  Yum!  And of course, with the of my new "intentions"...get left this morning without any breakfast.

I MUST DO BETTER!  Breakfast MUST become a staple in our home.  Daniel works so hard, and I don't like to think of him running on "empty" or just "grabbing a bite" somewhere. 

On another note....I have started my New Year with a thumbs-up on the laundry.  Even though I would like to get to the point where I only do laundry one day per week...say Monday--like the Amish women...it's not happening now.  And when Daniel looked at me this morning and said, "Do I have any clean work pants?", I just wanted to roll over and go back to sleep.

So before I even read my first email, I have a load in the dryer (washed last night) and a load of work-pants and skirts in the wash!  YEAH!  Dishes and laundry give me such a sense of accomplishment.

A kind reader has requested my Eggs-in-the-Hole recipe.  Personally, we use whatever bread we have on hand.  I LIKE to use my friend Susan's soaked, whole-wheat sourdough...but that's not always what I have available.

First, preheat your skillet and melt a tablespoon of butter in the pan.  Meanwhile, cut a hole in your break slices.  I use a glass about 2-2.5 inches in diameter.  Once the butter has melted, put the slices of bread in the pan.  I press down on the bread, to help it soak up the butter.  Think: grilled cheese sandwhich with only one piece of bread and no cheese!  :-)
Crack egg and drop egg yolk/white into the hole cut in the bread.  I usually wait to flip until the whites look as if they are almost solid. 
ONce that happens, flip the bread/egg combo and cook another 2 minutes.
Serve!
