In the Kitchen: Mom's Pear Salad
Okay, so I'm not very good at coming up with original recipes. I'm much better at taking other recipes and tweaking them to fit my needs, so I hope that will be okay with Karen. But for my first "In the Kitchen" post, I am going to share a recipe that my mom made for every family function for as far back as I can remember. My mom passed away in January of 2006, but someone (usually me) makes a point to bring this dish to every family get together or dinner. When I was growing up, all of my mother's nine kids loved this dish. But we only got it at church potlucks or special dinners like Thanksgiving, Easter or birthdays. This may not sound appetizing to you, but my mouth is watering just writing this. And it always brings back memories. Luckily, it is very simple to make.
Pear Salad
Mom always used a round, glass dish. She would wash the lettuce leaves and arrange them in a circular pattern on the dish. Drain the pear well, and place them, with the inside of the pears up, in a circular pattern on the lettuce. Place a dollop of mayo in the hole of each pear. Sprinkle each dollop with the shredded cheese and place a cherry on top. Refrigerate until ready to serve. Voile! A colorful dish, simple and tasty dish!
