Back on track & tomatoes

Wow. When my life gets too full and too stressful, my blog is one of the first things that suffer. My house is second. The past week has just been on thing after another. I have had at least two things out of the house every day, and last Saturday I was out of town. Since I haven't blogged in about a week, you can imagine what my house looks like. I can only hope things slow down and I can get back on track. I had hoped to get back on track yesterday, but ended up babysitting my 2-year-old monster niece all day while her mother (my brother's wife) was in the hospital. She is pregnant and due to have another baby in about three weeks, but the doctors believe it will come early.

Well, I have taken a break in bewteen school subjects to write this, but I really must get back. I'll post more later, but in the meantime, take a look at these. My tomatoes have finally decided they want to be picked. These two buckets/baskets are very large, I hope you can get a good idea of who many toamtoes are in here ! I picked all of these in one day. They were picked Monday, and I MUST can them today before they spoil. I was supposed to do it yesterday, but my home is not 2-year-old proofed and it just wouldn't have been a good idea with my niece here. I will probably be able to pick more today before I start canning. The ones on the left are Mountain Spring and Best Boy varieties, and on the right is a huge bucket of Roma tomatoes.

Do you have a link or a book or someplace you can point me for step by step instructions on how to can up tomato's.

I bought a water canning pot last year to do canning but have not done anything....I am intimidated but just need encouragement and guidance.

p.s. I read that to have enough tomatoes to can to last for a whole year you need 15 plants per a person! Wow, that is a lot of plants!!!
