Bananas galore

I posted this weekend that I was going to use up some quickly ripening bananas and make a mountain of banana-based food, but I didn't get to it until today.

I bought the green bananas Friday, but by Sunday they were really ripe. That was quick! So today I made banana cake cookies and banana crumb muffins for the first time, as well as my old banana bread standby. And I still have bananas left!

Of the three, the banana bread was the easiest, so I wanted to make several and freeze some. But I only have one loaf pan and it takes an hour to bake! I can see I need to get another loaf pan.

And yes, the banana bread got a little bit too done on the outside (it's still great on the inside, though). That's what happens when I try to get on the computer while I have things going on in the kitchen... not a good idea!

Everything tastes pretty good, but the cookies were my least favorite to make. That's because they called for shortening, and I hate dealing with the messy stuff.

Maybe tomorrow I can get another loaf pan and knock the rest of the those bananas out in one day.

Banan loaf pans....

I know you posted this a while back....and you probably already have a remedy....have you considered buying a package of 3 of those mini tinfoil loaf pans that you can get in the grocery store?

One batch of my banana bread recipe will make 3 loaves at a time....then I can eat one, and freeze two and with the small size, it comes in handy to have one to give away as a gift to someone if an occasion comes up =) Banana bread is one of my favorites and I was just given a delightful recipe for zuccini bread recently that tasted delicious.

Winter time is coming and for some reason I just love these type of breads in the fall and winter.
