Finding Contentment | |
Bananas galore
I posted this weekend that I was going to use up some quickly ripening bananas and make a mountain of banana-based food, but I didn't get to it until today. I bought the green bananas Friday, but by Sunday they were really ripe. That was quick! So today I made banana cake cookies and banana crumb muffins for the first time, as well as my old banana bread standby. And I still have bananas left! Of the three, the banana bread was the easiest, so I wanted to make several and freeze some. But I only have one loaf pan and it takes an hour to bake! I can see I need to get another loaf pan. And yes, the banana bread got a little bit too done on the outside (it's still great on the inside, though). That's what happens when I try to get on the computer while I have things going on in the kitchen... not a good idea! Everything tastes pretty good, but the cookies were my least favorite to make. That's because they called for shortening, and I hate dealing with the messy stuff. Maybe tomorrow I can get another loaf pan and knock the rest of the those bananas out in one day.
