Cinnamon Rolls

Ingredients:

ä3 cups whole wheat flour

ä1 ½ to 2 ½ cups unbleached flour

ä2 T dry yeast

ä1 ¼ cups warm water

ä1/3 cup honey

ä2 eggs

ä1 ½ t salt

Filling:

ä4 T soft butter

ä1 cup brown sugar

ä1 T cinnamon

Glaze:

ä2 cups powdered sugar

ä¼ cup hot water

ä½ t vanilla

 

Mix whole wheat and yeast. Add water, oil, eggs and salt. Mix well. Add remaining flour 1 cup at a time until dough cleans the side of the bowl. Knead until smooth and elastic. On oiled surface roll dough into a large thin rectangle. Spread filling over dough. Roll jelly roll style. Using dental floss, cut roll into slices. Place rolls on baking sheet. Let rise until double. Bake at 350° for 15 minutes. Glaze is optional.

Hint: I make these up the night before. We don't have a microwave anymore, so I stick them in the fridge covered overnight and bake in the morning. They are not quite as fluffy with this method. If you have a microwave, bake the night before and then refrigerate. Zap in the morning and they come out nice and fluffy.



My Famous Granola Recipe

I'm going to share my famous recipe with all of you. Anyone who has tried this recipe just loves it!

In 9x13 pan put:

5 cups oatmeal (I prefer old fashioned rolled oats)

1 cup unsweetened coconut

3/4 cup raw sunflower kernals

Bake at 300° for 20 min, stirring once. I like it best when the coconut starts to brown.

In med saucepan melt 1 stick of salted butter. Add:

1/2 cup honey

1/2 cup brown sugar or molasses

Stir until dissolved. Remove from heat.

Add 3 t vanilla to butter mixture and stir.

Pour butter mixture over oatmeal mixture and stir until all is coated. Bake at 350° for 5 min.

We like to serve our granola with vanilla yogurt. Yum!

We also will save 3-6 cups of granola to make granola bars.

I found this at http://smarshmallow.blogspot.com/. We tried it and it is a wonderful breakfast and the coffee was not too strong. I even let the kids eat some!

Cappucino Muffins

2 cups flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1 tablespoon instant coffee
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup milk
1/2 cup melted butter/margarine, cooled
1 beaten egg
1 teaspoon vanilla
3/4 cup chocolate chips (I used mini chocolate chips and they worked great!)

Mix as for muffins. Bake in a 375 degree oven for 15-20 minutes in greased muffin tins. YIELD 18 muffins
