Blueberry Jam

This always turns out great!!!!

 

5 cups fresh blueberries

1/4 cup water

3 cups organic sugar

1 cup honey.

 

In large kettle, bring berries and water to a boil, mash while doing so.  Stir 5 minutes after berries start to boil.  Add sugar and honey.   Boil gently, uncovered for 30 minutes.  Stirring quite often.  Skim off foam on top, and then pour into hot jars.  Leave 1/2 inch headspace in your jars.  Adjust caps, process in a water bath for 10 min.  yields 4 to 4 1/2 pints.
