1. One gallon cucumber slices, peeled , seeds and centers removed. Cut in 1/8 inch slices. Mix 1 c. dehydrated lime with 1 1/2 quarts cold water. Put slices in this solution and soak for 24 hours.
2. Drain slices and wash in cold water 3 times. Pour cold water over slices and soak 3 hours covered with ice. Add 1/2 cup apple cider vinegar and 1 oz. bottle red food coloring, 1 1/2 hours. Drain and throw away liquid.
Cover with water and simmer just below boiling for 2 hours. Drain and throw away liquid.
3. Syrup for slices:
3 c. vinegar
3 c. water
3 3/4 lbs. sugar (2 1/4 c. equals 1 lb)
8 sticks of cinnamon, crushed in cheese clothe
1 pkg. (9 oz.) cinnamon drop candy
Bring to a boil, dissolving cinnamon drops. Pour over slices and let stand overnight. Drain, reheat and pour over slices for 2 mornings, leaving cinnamon bag in kettle. 3rd. morning, heat slices and syrup to boiling. Pack in jars and seal. The bigger and riper the cucumbers the better.
