Mash potatoes in a large mixing bowl. Gradually, add vanilla and sugar until mixture is like dough. Roll out on waxed paper.
Spread with peanut butter. Roll into a log. Chill for several hours. Slice across roll making pin wheel slices.

Yes, everyone loves potato candy around here and it is very good. One of my hubby`s favorites. On the sugar just those small boxes. I have made it so much I just know what it is suppose to look like. I just guess at how much I need. Try it.
