This recipe was one my grandmother made all the time for Thanksgiving and Christmas or any big family dinners. Both of my aunts and my mom makes it too. I have started making it as well. I wanted to share it with you all. I am know sure where my grandmother got the recipe, but I know it is good.
1 c. drained, crushed pineapple
1 pt. cottage cheese
1/2 c. chopped pecans or English walnut
2 boxes lime jello (3oz.) or 1 lg. box
1c. pineapple juice, if not enough to make 1c. add water
1/2 pt. whipped cream or 1 pkg. Dream whip, whipped
12 marshmallows
Mix jello using 1 cup hot water plus 2 cups cold water. Add pineapple juice and marshmallows. Chill in refrigerator. After chilled until just thick, whip slightly.
Fold in pineapple, nuts , cottage cheese, and whipped cream. Put in individural molds or a 13x 9 inch pan. Cut in squares and serve.
