2 c. Dandelion Blossoms, rinse and drain 1 qt. water 1 pkg. powdered fruit pectin 51/2 c. sugar 2 tbs. orange or lemon extract 4-6 drops of green food coloring, opt.
In a saucepan, bring to boil, dandelion blossoms and water. Boil for 4 mins. Strain through a damp jelly bag or cheeese cloth; reserving 3 cups of liquid. Discard the blossoms. In a large kettle combine dandelion liquid and pectin; stir well. Bring to a full rolling boil over high heat, strirring constantly. Remove from heat and add extract and food coloring. Skim off foam. Pour into sterile jars, leaving 1/4inch head space. Adjust lids. Process for 5 mins. in a boiling water bath. Yields about 6 half-pints
Thanks for sharing this recipe. I always fry the blossoms in corn meal and flour. They are great that way. So this spring I'll have to try this recipe.
