Feeling better and knitting

It's been a little while since I've had time to sit down and share here.  I'm feeling better, still a bit off but better.  I've been trying to take it easy, although that's not easy.  lol
I finished the balaclava I was working on.  You can see pics here.  Dh is wearing it for the pics, but it's for BIL.  Dh loves it so I'm starting another one for him tonight, then one for my Uncle. 
I still have a bit to do, to get the doll for the girls done.  I'm hoping I can still finish it by Christmas.  But if not it will be a New Years gift! 
 
Thank you everyone for your comments and questions on my canning beef soup video.  I will try to get a vid/post made soon on choosing canners and the basics soon. 
Oh, I updated that post as well.  The vinegar I mentioned at the end wasn't for the soup.  If you put a little vinegar in the canning water it keeps the calcium build up from forming on the jars.  Saves washing all that white powder off.

I enjoy canning our own conveniences food.  Store bought soups are expensive and high in salt and other additives.  I love having  home cooked suppers on our pantry shelves.  Lets face it we ALL have crazy days that we are tempted to pick up fast food.  I try to keep a stock of home canned food available for times I’m just to tired or sick to cook supper.

*Note at the end of the video I mention forgetting to add vinegar.  This isn't for the soup.  If you add a little vinegar to the canning water it keeps the calcium (white powder) from building up on the jars.  It saves time washing the jars after canning.

How to can beef soup

  • Place soup bones in a roasting pan and roast at 350F for 1 hour.  This doesn’t have to be an exact time, just until they are nicely browned.
  • Remove bones from pan and place in a stock pot.  Cover with water and add chopped onions, celery ends, what ever you have on hand.  Bring to a boil.  Turn down and simmer until broth has cooked down into a nice dark rich tasting liquid.
  • Strain the broth and place in the fridge to cool over night.
  • The next day skim off the fat and reheat broth.  Season to taste.
  • Peel and dice potatoes and carrots.  I use approximately half a cup per quart jar.
  • Add vegetables to jars then add desired amount of meat.
  • Cover with hot stock.  Run a spatula around the sides to remove any air bubbles.
  • Wipe rims,  add lids and rings finger tight.
  • Can at 10 pounds pressure for 90 minutes quarts, 75 minutes for pints.

Sick

Last night hubby started coming down with something.  I gave him some flu meds and we went to bed.  He woke up still sick but better.  I woke up really sick.  I gave him another dose of the meds and took some myself.  Thankfully he's been well enough to keep things moving around here.  I napped for a few hours today, my eye's just would not stay open.  Between the rest and meds, I'm feeling a little better.  Hope to shake this soon!
 
We did make some gingerbread men tonight with the little ones.  They had such a good time!  This week I had planned a unit study on the Gingerbread boy/man books.  So I'm hoping to feel better tomorrow!

First blizzard of 09

Winter is here!  Last week we had quite the storm.  Not as much snow as some places about a foot maybe a bit more.  But the winds were very strong.  It made for lots of white outs.  Schools were closed in the area for 3 days and many roads as well. 



Economic collapse? Can't get a job are you over qualified?

Hubby was talking on skype with some friends and didn't know in the USA you can be overqualified. This was interesting as he has never encountered this, in Canada.  It's a term we often hear in movies, and didn't think was a real problem.

Its been snowing all night and still coming down hard.  For the 3rd day in a row, schools were closed and most of the roads in our area as well.
Its a good day to sit and knit!

Connie, I wanted to say thank you so much for the sweet gift package you sent!  Being a chocoholic lol last night I got into the candy cane hot chocolate.  Mmmm so good!  Hubby and I sat by the fire enjoying that.
 
Connie blessed me with a new Christmas tea towel, a cute little ornament that's on my tree now. :-)  And some yummy teas, hot chocolate and candy.

Hubby and a good friend over installing the tile in our summer kitchen.  I love the tile color and layout!
