Cast Iron cookware

To me cast iron cookware is the only way.  Alot of people won't use cast iron because they think it is hard to take care of.  It is actually pretty simple once you know how to do it.  Some of my skillets are at least 50 years old..some are brand new.  I love them all.  Cast Iron doesn't require soap to clean.  I usually use plain water and a teflon sponge or dish cloth.  If something is really stuck or burnt on I use a lil baking soda to remove it.  Now the secret to a well seasoned skillet is everytime you wash your pan, dry it with a cloth and put it on the stovetop.  Heat the skillet hot and rub shortening all in the inside.  Turn the fire off and let it cool.  When it is completely cool wipe out any excess shortening.  It is ready for use again.  I would put my ol' skillet to the test with any teflon coated pan any day.  Have fun cooking with your cast iron and notice how wonderful it cooks a roast.  Blessings to you!

I love cooking with iron skillets. That is what my grandmother used. I love baking cornbread in them. sheryl

I have never liked Teflon. Dh got me some new pans... similar to teflon but supposed to last 15 times longer. We will see... I hate flaking teflon! He loves it though. My cast iron pans are used less often since he bought the new pans. He hates the bulkiness of the pans and the storage issue. They are just so heavy and in the way. And why, I'm not sure... the food sticks when he uses them and not me??? I'm thinking he doesn't heat the pan before adding his food. But he hates them, so I put them farther in the cupboard, so they don't bother him, but I still love digging it out and using mine! I still long for more! The only cast iron pan I couldn't figure out to work was the griddle/grill piece. I could never keep both sides of the pan nice... one always got nasty. Dh took that to the scrap iron pile last week. *sigh* I still am longing at the round cast iron griddle though... I may sneak that buy in some time... the rectangular one just didn't work on our oven so well and ended up with hot spots... plus it scratched the grates on the stove... so I rarely used it, but I would use a round griddle that goes over just ONE burner.

Anyways, I am rambling. I totally agree with you. When you learn to use it... it is a great piece in the kitchen. You just have to have dishwashers that know how to use it as well... Dh always took soap and steel wool to it and ruined the coating so I would need to start over. LOL. I don't let him wash my pans anymore...in fact he's not allowed in the kitchen when Cast iron is in use! LOL. Girls know it too... they like the pans and figured them out...
