Dandelion Jelly...
I've been asked about Dandelion Jelly. Here are some sites that I found recipes on. They are almost all the same, just some add more details to the directions. I've sold 7 jars of the jelly so far and I've had 3 come back and specifically tell me that it is very good stuff. LOL

Have fun with this! We did. I plan to make another couple batches once the dandelions come back again. Right now, they are seeded out, so it will be a few weeks before I probably get to make it again.

HELP!!!! I did mine. I packed a quart jar (and I mean PACKED) with the yellow blossoms. I followed the directions to get a nice yellow-brownish water.... I added teh sugar, the pectin, and boiled for one minute, as said the recipe. and now I have dandelion syrup. it did NOT jell! I reboiled it, but still no jell. any ideas?????
Yes... The recipes and SEVERAL jelly recipes say to boil "one minute" but that just doesn't work on my stove. Even a hard boil for one minute doesn't hack it... I think my "temperature" just doesn't get hot enough... so I boil it until the jelly sheets off a spoon. You aren't supposed to NEED to do this if you add pectin, but I've found that certain fruits just won't gel unless I follow this step as well. So before I add the pectin to the recipe, I boil long enough for the sugar/fruit mixture to sheet, then I add the pecting and boil hard again for 1-2 minutes. That has worked on my jellies that seem to have difficulty setting up... I tend to test recipes following the directions, but if it doesn't work... I follow the sheet test and ignore the boil one minute recipe suggestion. That can be frustrating, but we like rhubarb syrup for pancakes and waffles, so it wasn't a big loss for us to sample it. Rhubarb jam is one that won't set up by the recipe for me.
I don't have a website that describes sheeting. But I do have a ball canning book that describes sheeting. I hope you can find a resource that will help you with that. It is in the directions for jelly without pectin...

wild flower jellies
I missed the violets blooming this year, and it isn't quite time for rose petals so I will have to try dandelion. I think they basically take on the flavor of the sugar and taste like a nice light jelly. They are sure fun to make.

did you make a certain area in your yard to seed these. I am trying to and don't know how. My horses seem to like dandelions and I can't get enough to make a single batch :). Any suggestions would be great!
