Bread...
Tonight I am up late waiting on two loaves of bread to rise. It is the last of my frozen bread loaf dough. I got them out at around 9 am this morning, but they are just finally rising. It was too cold in the house to warm up. I tried to start a fire, but it wouldn't draft well with it being 60+ outside. This frozen dough is just white bread dough from Aldi's. Dh likes the bread...as well as another white bread recipe I have, but....
I am hoping you all can help me with some ideas for bread. I am trying to go away from refined foods... at least overly refined foods. This is hard for me as I grew up on refined foods. I am moving step by step in the right direction, but to be honest, when I am tired, I fall back into old familiar foods. This I am trying to change.
One thing I am looking for is a nice soft wheat bread for DH. He doesn't like the heavier breads I have been making. The girls like them fine... but Dh is unhappy... even to the point that last week he bought himself a bread when I had just made 4 loaves of bread! So, I really need help with that. I don't have the option of using lecithin as my daughter is allergic to soy, but I am open to other ideas... even if it is a hard to find item... But I want to know it really works... I tried adding gluten to my loaf and it didn't do a thing...
Also for those that have made the change... do you have some good recipes for bread, buns, rolls, (which I need alot of help with... I do not know how to determine how much dough is needed for buns and rolls ... meaning if I make a 2 pound loaf... how many rolls should I expect to get? I'd like to make my own hot dog buns and hamburger buns).
I am also looking for good recipes in the baking department, looking for low sugar/whole grain goodies.

What kind of wheat do you use for your bread? Do you grind your own grains? When I started grinding my own grain we switched from using the store-bought wheat flour to grinding my own white berries. It produces a lighter tasting and fluffier bread than the red wheat berries or the storebought wheat flour did. I do use gluten, too. I use Crystal Miller's recipe. (she is so awesome!)

I forgot to mention one more thing. Crystal's site is full of yummy recipes using natural sugars and whole grains. :)

Definitely check out Crystal Miller's website (www.thefamilyhomestead.com). My dh is never disappointed when I use her recipes for a new meal. I didn't see the bread recipe we use, but I know it's her recipe (it's great for sandwiches). I will try to remember to grab it from home and send it to you or post it on my blog. Good luck!

I would love to find some as well. Make sure to post any great recipes you find. I tend to find that mixing whole wheat and white flour gives it a better consistency. Not so 'heavy' of a bread. It does take practice. I will look and see what i have as well. I am with you on trying to slowly get of over refined foods.
