Thrifty Recipe

Just thought I'd share what I posted on my other blog over at homeschoolblogger. I was needing to find an easy crockpot meal to make yesterday, in order to rest later in the day, after my unbelievably horrible ordeal at hospital on Monday......and knowing my family doesn't like tomato-based products all that much, changed up a recipe I found somewhere to this: (it's not as 'homemade' as I like to do things, but in a time pinch, this was a better alternative than take out). "The Day after the Dreaded Procedure gone bad" Hamburger/Potato Casserole 1 lb hbgr., browned and drained (I added minced onions for flavor) 3-4 potatoes (adjust for family needs) carrots (I used baby ones, half a small bag, it called for 3 reg. carrots) Here's where it got different: 1 can golden mushroom soup 1 can mushroom soup 1 can beef broth ***I also added one of those small cans of mushrooms (drained), but some do not like that many mushrooms, so I would consider that optional. Peel and slice the potatoes, layer the potatoes and carrots in the bottom of the crock pot. Put browned hbgr. on that.(This is where you would put the mushrooms, if you wanted them) Put soups over that mixture, then the beef broth over all that. I cooked it on HIGH for 6 hours, so it bubbled and sort of got thicker. I'm sure you could add a few tablespoons of flour or cornstarch to the layer before the soups to thicken it even more. I stirred it up once about an hour before we ate. You could also add any seasonings you'd like, although it was salty and flavorful enough for us. I thought about how to serve this. Didn't really need noodles or rice or anything because of the potatoes, so I came up with biscuits. And then I thought "put the biscuits on top while it's cooking". I suppose you could add drop biscuits on top or even spoon cornbread on top. I have a crockpot recipe for chili type stuff that uses cornbread dropped on top. Pretty good. I'm thinkin' the cost breaks down like this, at least for me living in this area: hbgr/ 1.66 (and I know you can buy it cheaper in bulk) potatoes/ minimal maybe around .30 cents? carrots/ .50 cents (half a bag) optional can of mushrooms/.50 cents soups: mushroom/.39 cents golden mushroon/ $1.39 beef broth/.79 cents (I used a can b/c I HAD it, but would more than likely use the MUCH cheaper boullion option......about what......05 cents?) That all comes out to $5.03. If I had used the boullion option it would have been under 5 bucks, $4.29 to be exact!! AND if I had bought hbgr at .99 cents a pound, it would have been UNDER $4 dollars ($3.62!!!)!! I'm thinking it made about 6-8 servings. Making that about .71 cents a serving!!! Didn't do the biscuit breakdown, but that is incredible, especially with the homemade biscuit mix. I'm going out on a limb and will say around .25 - .50 cents for a dozen biscuits and that's without actually figuring it. So still, for under 5 bucks you could feed a decent sized family. $5.00 for a meal for an entire family is pretty thrifty in my book. In fact, I couldn't eat at Mickey D's MYSELF for that price. And someone out there is STILL insisting that eating out costs the same as eating at home?? Delusional. Denise aka The Domstic Angel |
