The Great Pumpkin!
Pumpkin. The word just calls to mind visions of autumn doesn't it? Pumpkins are a staple for all your fall decorating and of course, your fall cooking and baking too! There's nothing better than a warm slice of pumpkin bread and a glass of milk on a chilly autumn day. Or how about a thick slice of traditional pumpkin pie topped with some homemade whipped cream for all your holiday get togethers. Any way you slice it, pumpkin is a must have!
Traditional Pumpkin Bread
3 c. sugar
1 c. oil
3 eggs
2 c. canned pumpkin
1 c. walnuts (optional)
3 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. soda
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
Blend oil, sugar and eggs. Stir in pumpkin. Add shifted dry ingredients. Stir in walnuts (optional). Put in greased pan. Bake at 350 degrees for 1 hour and 15 minutes. Allow to cool.
Chocolate Chip Pumpkin Bread
3 cups white sugar
1 (15 ounce) can pumpkin puree
1 cup vegetable oil
2/3 cup water
4 eggs
3 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
2 tablespoons baking soda
1 1/2 teaspoons salt
1 cup miniature semisweet chocolate chips
1/2 cup chopped walnuts (optional)
In large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, spices, soda, and salt. Fold in chocolate chips and nuts. Grease and flour three 1 pound size coffee cans or three 9 x 5 inch loaf pans. Fill cans 1/2 to 3/4 full. Bake at 350 degrees F (175 degrees C) for 1 hour, or until an inserted knife comes out clean. Cool on wire racks before removing from cans or pans. Wrap in cellophane once completely cooled. Makes 3 loaf pans.
Makes 3 loaves
Pumpkin Biscuits
1 1/2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1/3 cup butter, cold
3/4 cup pureed pumpkin (cooked or canned)
3/4 cup milk
Sift flour into mixing bowl. Stir in remaining dry ingredients. Cut in butter with a pastry blender until mixture is crumbly. Stir in pumpkin and milk to form a soft dough. Roll out on floured surface to 1/2-inch thickness. Cut out biscuits with biscuit cutter. Place on greased baking sheet. Bake at 450 degrees for 15 to 20 minutes. Makes 24 to 30 biscuits, depending on dough texture and cutter size.
Pumpkin Muffins
3-1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon vanilla
4 large eggs
1-1/2 cups sugar
1 cup oil
2 cups pumpkin
1 cup raisins
Preheat oven to 350 degrees, butter 3-inch muffin pan generously. In a small bowl, combine pumpkin, vanilla, eggs, oil and sugar. Sift flour, baking powder, soda, cinnamon and salt. Combine wet and dry ingredients, beat until smooth. Add raisins. Pour batter into greased muffin pan, filling each cup 2/3 full. Bake for 30 minutes until lightly browned.
Pumpkin Corn Muffins
1 1/4 cups all-purpose flour
1 cup Yellow Corn Meal
1/3 cup granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1 1/4 cups Pure Pumpkin
1/3 cup milk
1/4 cup vegetable oil
PREHEAT oven to 375°F. Grease or paper-line 12 muffin cups. COMBINE flour, cornmeal, sugar, baking powder and salt in large bowl. Beat eggs, pumpkin, milk and vegetable oil in medium bowl until combined. Add to flour mixture; mix thoroughly. Spoon batter into prepared muffin cups. BAKE for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Serve warm.
Pumpkin Butter
1 can (15 oz.) pure pumpkin
1 medium apple, peeled and grated
1 cup apple juice
1/2 cup packed brown sugar
3/4 teaspoon pumpkin pie spice
Combine pumpkin, apple, apple juice, sugar and pumpkin pie spice in medium, heavy-duty saucepan. Bring to a boil; reduce heat to low. Cook, stirring occasionally, for 1 1/2 hours. Serve with buttermilk biscuits, breads, corn muffins or hot cereal. Store in airtight container in refrigerator for up to 2 months.
Pumpkin Dip
2 packages of cream cheese (softened)
1 cup powdered sugar
1 can pumpkin
1/2 to 1 teaspoon ginger
1 teaspoon cinnamon
Mix cream cheese and powdered sugar together in mixer. Add pumpkin and spices and blend well. Use ginger snaps to dip.
Pumpkin Jam
1 each Medium Pumpkin
4 LB Sugar
4 each Lemons
4 each Oranges
Cut up and dice 1 medium pumpkin For 2 bowls of pumpkin use 1 bowl of sugar. Cut up 4 lemons and 4 oranges. Combine pumpkin, lemon and orange and cover with the sugar. Let stand over night. Next day, mix well and cook until pumpkin is clear. Pack in sterile jars and seal immediately.
Tempting Pumpkin Pie
Best Flaky Pastry:
1 cup Gold Medal all-purpose flour
1/4 teaspoon salt
1/3 cup plus 1 tablespoon shortening or 1/3 cup lard
2 to 3 tablespoons cold water
Filling:
2 eggs
1/2 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 can (15 ounces) pumpkin (not pumpkin pie mix) - make your own
1 can (12 ounces) evaporated milk
Mix flour and salt in medium bowl. Cut in shortening, using pastry blender or crisscrossing 2 knives, until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
Gather pastry into a ball. Shape into flattened round on lightly floured surface. Roll pastry, using floured rolling pin, into circle 2 inches larger than upside-down pie plate, 9 x 1-1/4 inches. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
Trim overhanging edge of pastry even with plate. Cut scraps from the crust with mini leaf shaped cookie cutters. Sprinkle cutouts with sugar; press on pastry edge.
Heat oven to 425 F.
Beat eggs slightly in medium bowl with wire whisk or hand beater. Beat in remaining ingredients.
To prevent spilling, place pastry-lined pie plate on oven rack. Pour filling into pie plate. Bake 15 minutes.
Reduce oven temperature to 350 F. Bake about 45 minutes longer or until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 4 hours or until chilled. Immediately refrigerate any remaining pie after serving.
Note:
The cutouts that top the filling are baked on a cookie sheet while the oven is at 425°F. It will take just a few minutes for them to bake golden brown. Let cool. Once pie has baked and cooled, top with baked pastry in the branch of leaves pattern.
Top this pie with "spiced cream clouds" without last-minute fuss! For 8 nice dollops, simply beat 1/2 cup whipping (heavy) cream with 1 tablespoon packed brown sugar and 1/4 teaspoon ground cinnamon in a chilled small bowl with an electric mixer. on high speed until stiff. If making ahead, drop the whipped cream by 8 dollops onto waxed paper and freeze uncovered at least 2 hours, then cover tightly and freeze no longer than 2 months. If you plan to add a candy pumpkin when serving, make a depression in each dollop before freezing. Once on the pie, the frozen dollops need to stand only 5 minutes before serving.
Pumpkin Cheesecake Bars
1 16 oz package of pound cake mix
3 eggs
2 tablespoons margarine or butter, melted
4 teaspoons pumpkin pie spice
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can Eagle® Brand Sweetened Condensed Milk (NOT evaporated milk)
1 (16-ounce) can pumpkin (about 2 cups)
1/2 teaspoon salt
1 cup chopped nuts
Preheat oven to 350°. In large mixer bowl, on low speed, combine cake mix, 1 egg, margarine and 2 teaspoons pumpkin pie spice until crumbly. Press onto bottom of half sheet pan (16 x 10 inch).
In large mixer bowl, beat cheese until fluffy. Gradually beat in Eagle Brand, then remaining 2 eggs, pumpkin, remaining 2 teaspoons pumpkin pie spice and salt; mix well.
Pour over crust; sprinkle with nuts. Bake 30-35 minutes or until set. Cool. Chill; cut into bars. Store covered in refrigerator.
Pumpkin Cake Roll
Cake Roll
14-16 servings
3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp. lemon juice
3/4 cup flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
FILLING:
1 cup powdered sugar
1 pkg cream cheese, softened, (8 oz)
4 Tbs. butter
1/2 tsp. vanilla
1/3 cup nuts, if desired
Beat eggs on high speed 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice.
Combine and sift flour and remaining dry ingredients (not the nuts). Fold the flour mixture into the pumpkin-egg mixture.
Spread in a 15"x 10" pan or 12" x 18" lined with waxed paper. Bake for 10-15 minutes at 375 degrees.
Loosen edges with a knife, then turn onto a towel sprinkled with powdered sugar. Roll towel and cake together.
Combine all filling ingredients and beat until fluffy. Unroll cake and spread filling over cake. Top with nuts and roll. Chill.
Serving Suggestions:
1. Cut each slice of cake and sprinkle with cinnamon. Arrange on a plate and serve.
2. Goes very well with Thanksgiving or Christmas dinner.
Storage suggestions:
Cover and store in refrigerator for up to 3 days. Keeps well in freezer for 1 week.
Chocolate Pumpkin Truffles
2 1/2 c Vanilla wafers, crushed
1 c Almonds, toasted & ground
1/2 c Powdered sugar, sifted
2 ts Cinnamon
6 oz Chocolate chips (semi-sweet)
1/2 c Pumpkin (canned)
1/3 c Coffee liqueur
1/4 c Powdered sugar, sifted
*Note: Apple juice may be substituted for coffee liqueur if desired.
In medium bowl, combine vanilla wafer crumbs, ground almonds, the 1/2
cup powdered sugar, and cinnamon. Blend in chocolate, pumpkin, and
coffee liqueur. Form into 1-inch balls. Chill. Dust with remaining
powdered sugar just before serving.
Vegetable and Rice Stuffed Pumpkin
1 Pumpkin (14 or 15 inches in Diameter) or 2 smaller ones
4 tb Sugar
2 tb Tamari sauce
1 c Water
1/2 lb Fresh shelled chestnuts
1/4 c unsulfured raisins
1/4 c unsulfured apricots, Chopped
1 Granny Smith apple, chopped or any tart apple
1/2 c Walnuts, broken but not too Small
1 Stalk celery, chopped
1 md White onion, chopped
1 md Red onion, chopped
1 cn Corn, drained
1 md Sweet green pepper, chopped
1 md Sweet red pepper, chopped
1 md Zucchini squash, chopped
1 md Yellow squash, chopped
2 md Fresh jalapeno peppers, Seeded and minced
2 c Cooked brown basmati rice
1/4 ts Mace
1/4 ts Tumeric
Black pepper
1/2 ts Cinnamon
4 tb Tamari sauce
1. Preheat oven to 350F. Wash pumpkin and cut off the top, angle the cut so that the top will fit back on more easily, use a big spoon to scoop out strings and seeds. Mix sugar and 2 tbs. tamari sauce (you can warm them in the microwave so they will mix more easily ) and spread evenly over insides of pumpkin. Line the bottom of a large pan with single piece of aluminum foil folded over itself 3 or 4 times, pour 1 cup water in pan, place top back on pumpkin and place in baking pan, cover the pumpkin and the pan with foil. Bake for 20 to 25 minutes until pumpkin is just starting to become tender, the thicker the pumpkin the longer it will take.
2. Steam the nuts for about 15 minutes. Rinse them in cool water and slip off the brown skins. Chop chestnuts coarsely.
3. Combine chestnuts with raisins, apricots, apple, walnuts, celery, white and red onions, corn, green and red pepper, jalapeno peppers, mace, tumeric and rice, mix well. Add the 4 tbs. tamari and mix again.
4. Dust the inside of the pumpkin with the cinnamon. Pack the pumpkin with the filling and replace the pumpkin top. Return pan to oven, add water to cover the bottom of the pan and bake for 45 to 55 minutes.
5. If you are going to serve the pumpkin on something other then the pan it was cooked in BE CAREFUL. The bottom of the pumpkin may be VERY soft. Wrap the foil from the bottom of the pan up around the pumpkin as you pick it up, this will keep the bottom intact.
When serving this recipe, scrap the inside of the pumpkin with the serving spoon and mix the pumpkin into the stuffing.
If you have leftovers do not leave it in the pumpkin. Remove the filling and scrape out the pumpkin and store in your refrigerator.
Pumpkin Pecan Bars
- 1/2 c Butter or margarine; softend
- 1 c Brown sugar; firmly packed
- 1 1/2 c Flour; unsifted
- 1 c Oats
- 1 ts Baking powder
- 1 ts Salt
- 16 oz Pumpkin
- 1 cn Sweetened condensed milk
- 2 Eggs; beaten
- 2 ts Pumpkin pie spice
- 1 1/2 ts Vanilla extract
- 1 c Pecans; chopped
- Confectioners' sugar; (opt)
Preheat oven to 350~. In large mixer bowl, beat margarine and brown sugar until fluffy; add flour, oats, baking powder and 1/2 teaspoon salt. Mix until crumbly. Reserving 1/2 cup flour mixture, press remainder on bottom of 15x10" jellyroll pan. Bake 20 mintues. Meanwhile in medium bowl, combine pumpkin, sweetened condensed milk, eggs, pumpkin pie spice, vanilla and remaining 1/2 teaspoon salt. Spread over baked crust. In small bowl, combine reserved 1/2 cup flour mixture with pecans; sprinkle over pumpkin mixture. Bake 30-35 minutes or until set. Cool. Cut into bars. Sprinkle with confectioners' sugar if desired. Store covered in refrigerator.
Pumpkin Cake with Chocolate Glaze
The Cake
3 c Flour
1 tb Baking powder
2 ts Soda
2 ts Pumpkin pie spice
1 ts Salt
4 Eggs
1 c Sugar
1 c Light brown sugar; packed
16 oz Pumpkin; pureed, canned or fresh
1 c Oil
The Chocolate Glaze
1 tb Butter
1 oz Unsweetened chocolate
dash salt
1/2 ts Vanilla
1 1/4 c Confectioner's sugar
2 tb Milk; or as needed
Make the Cake: Sift the flour, baking powder, soda, pumpkin pie spice and salt together; set aside. Beat the eggs until fluffy; add the sugars. Beat until very thick. Stir in the pumpkin and oil, until smooth. Blend flour mixture thoroughly into the creamed mixture. Pour into a greased and floured 10" tube pan. Bake in preheated 350 degree oven for about one hour or until cake tester inserted near the center comes out clean. Cool for 10 minutes before removing from the pan. Cool completely on a wire rack. Drizzle the glaze over the cake.
Make the Chocolate Glaze: Melt the butter and chocolate, in a small saucepan over low heat; stir in salt and vanilla. Add the confectioners' sugar with enough milk to make the glaze thin enough to drizzle over the cake. Note: This cake will keep well for several months in the freezer.

Autumn and Apples
Last weekend was just absolutely gorgeous here in KY. After the month of August was full of severe drought and temps that soared into the 90's and 100's for weeks at a time with no relief, last weekend was just perfect. Chilly temps, a cloudless blue sky, and lots of sunshine. Not to mentionit was made even sweeter by the KY Wildcats victory over the Louisville Cardnials ( Go Cats!!!), you could just taste autumn in the air. Anyway, while I played outside in the backyard with my son, my mind turned to autumn baking and cooking. I just love when its chilly outside, and inside my house is brimming with the scents of fall like apple, pumpkin and cinnamon. Sooooooo, I decided for my first blog the theme would be apple recipes...hope you like them.
Caramel Marshmallow Apples
1 package (14 oz.) caramels
1 cup miniature marshmallows
1 tablespoon water
5-6 small apples
Wooden skewers
Line a baking sheet with buttered wax paper; set aside. Combine caramels, marshmallows, and water in a medium saucepan. Cook over medium heat, stiring constantly, until caramels melt. Cool slightly while preparing apples. Rinse and dry apples. Insert skewers into apples. Dip each apple in caramel mixture, coating apples. Place on prepared sheet. Refrigerate until firm. For a fun change, roll apples in crushed peanuts or drizzle with melted chocolate.
Easy Caramel Apple Pie
1 frozen 9" pie crust
10 caramel candies; quartered
1/3 cup flour
2 teaspoons lemon juice
3 cups Jonathon apples; unpeeled; cut into 1/2" cubes
2/3 cup caramel ice cream topping
1/2 cup pecans; chopped
Preheat oven to 375 degrees. In a medium sized bowl, combine caramels and flour. Add apples, caramel topping and lemon juice; mix well. Pour mixture into crust; top with pecans. Bake on baking sheet at 375 degrees for 40-45 minutes or until crust has browned. Cool.
Crockpot Apple Butter
7 cups applesauce, unsweetened
2 cups apple cider
1 1/2 cups honey
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon allspice
In a crockpot, mix all ingredients. Cover and cook on low heat for 14 to 15 hours, or until the mixture is deep brown. Pack while hot into 4 hot pint jars. Process in hot-water bath for 10 minutes, counting the time after the jars have been immersed and the water comes again to a rolling boil. Makes 4 pints.
Apple Pancakes
Serves about 4
2/3 cups flour
2 teaspoons sugar
1/4 teaspoon salt
4 large eggs, beaten
1/2 cup milk
2 cups of apples cut into 1/4-inch slices
3/4 cups butter
2 tablespoons sugar
1/4 teaspoon cinnamon
Sift together the flour, 2 teaspoons sugar, and the salt. Beat eggs and milk together. Gradually add flour mixture; beat until smooth. Saute apples in 1/4 cup of butter until tender. Mix 2 tablespoons sugar and the cinnamon together; toss with apples. Melt 2 tablespoons butter in a 6-inch diameter, deep frypan. Pour in the batter to a depth of about 1/4-inch. When set, place 1/4 of the apples on top; cover with more batter. Fry pancake until lightly browned on both sides. Keep warm. Repeat the procedure 3 times, until all batter and apples are used. Serve immediately.
Honey Baked Apples
4 large baking apples
1 small banana, chopped
1/3 cup cranberries, chopped
3 tablespoons honey
3/4 teaspoon ground cinnamon
4 tablespoons water
Remove cores from apples and enlarge holes slightly to allow for filling. Peel a strip off the top of each apple. Place each apple in a 6-ounce custard cup. Combine banana, cranberries, honey, and cinnamon. Fill centers of apples. Pour 1 tablespoon water over each apple. Cook, uncovered, in microwave oven for 5 to 7 minutes, or until nearly tender. Let stand until cooled slightly.
Moist Apple Cake with Butterscotch Sauce
Serves about 8
For the cake:
4 large eggs, separated
1 cup plus 1 teaspoon granulated sugar
1/2 teaspoon plus 1/4 teaspoon ground cinnamon
1 cup melted butter
1-1/2 cup all-purpose flour
3 apples, peeled, cored and cut into thin slices
For the butterscotch sauce:
3/4 cup brown sugar
3 tablespoons water
1/3 cup corn syrup
1/3 cup butter
1/4 cup sweetened condensed milk
To make the cake:
Butter and flour an 8" square cake pan. Pre-heat oven to 375 F.
In a large mixing bowl, beat the egg yolks, 1 cup of sugar and 1/2 teaspoon of cinnamon for 3 minutes with an electric mixer on medium speed. Add melted butter. Blend in flour until the mixture is smooth.
In another mixing bowl, use a clean electric mixer to beat the egg whites until soft peaks form when you lift the mixer. Fold 1/3 of the egg whites into the egg yolk mixture to lighten it. Then repeat with the rest of the egg whites.
Pour the batter into the prepared cake pan. Arrange apple slices on top of batter, in an attractive overlapping pattern. Mix together the rest of the cinnamon and sugar and sprinkle over apple slices.
Bake for 50 minutes or until a toothpick inserted into the center of the cake comes out clean. Meanwhile, prepare butterscotch sauce (see below). Remove cake from oven and allow to cool for at least 10 minutes.
To make the butterscotch sauce:
In a saucepan, mix brown sugar, water and corn syrup. Cook at medium heat, stirring constantly, for 3 minutes or until the brown sugar is completely dissolved. Stir in butter, stirring until butter is completely melted. Remove from heat. Stir in condensed milk.
To serve, cut slightly cooled cake into 2" x 4" slices and place each slice on a dessert plate. Spoon warm butterscotch sauce over each slice.
Apple Pineapple Slaw
lettuce
3 cups shredded cabbage
1 cup chopped canned pineapple, drained
1 cup diced apples
1 cup mini-marshmallows
1/2 cup chopped celery
1/2 cup mayonnaise
apple slices
lemon juice
Line a salad bowl with whole leaves of lettuce. Combine cabbage, pineapple, diced apples, marshmallows, celery and mayonnaise in a mixing bowl until mayonnaise coats all ingredients. Transfer salad to lettuce-lined bowl. Toss apple slices in lemon juice and garnish the slaw with the apple slices.
Apple Fritters
3/4 cup all-purpose flour
1/8 tsp. salt
1 egg, slightly beaten
1 tbsp. vegetable oil
1 tsp. rum (optional)
1 tsp. vanilla extract
1/2 cup beer (light, not dark)
Vegetable oil, for frying
2 egg whites
4 medium size apples (such as Granny Smith's, MacIntosh, Red Delicious, Golden Delicious or Fuji apples)
1/2 cup confectioners' sugar or granulated sugar
Ground cinnamon or ground nutmeg

Instructions:
Sift flour and salt into a large bowl. Stir in egg, the 1 tbsp.oil, the rum, and the vanilla. Gradually beat in enough beer to make a medium-thick batter similar to thickness of whipping cream. Cover bowl and let stand 1 hour.
Heat oil for deep frying to 350°F (180°C). Immediately before frying fritters, beat egg whites until stiff and glossy. Use a wooden spoon to fold beaten egg whites into batter.
Peel and core apples and cut into 1/4 inch crosswise slices. Dip into batter, 2 to 3 at a time, covering completely. Lower into hot oil and fry until golden brown on both sides. Drain on paper towels. Keep warm. Repeat until all slices are battered and fried.
To serve, sprinkle fritters generously with confectioners' sugar or granulated sugar and ground cinnamon (or ground nutmeg). Fritters are best served very warm.
Makes 24 apple fritters.
