Wow! I didn't realize how long it's been

since I was here last..It has been a very busy summer, we went on vacation in Chattanooga, had a great time, and we have been busy gardening,  decluttering (big time!) remodeling, I now have a laundry room, and we have redone the girls room and are working on our bathroom and redoing our sons room.

 Continuing school since we go year round and have even made more changes in our schooling curriculum that I will share later. Other than that, it's the same old same old which is o.k. considering all the drama of life that goes on.  Boring is good!

I am going to be updating and making some changes so that I can keep up my blog better.

Great Recipe for Couscous


Black Bean Couscous Salad  

INGREDIENTS:
1 cup uncooked couscous
1 1/4 cups chicken broth
5 tablespoons extra virgin olive
oil
4 tablespoons fresh lime or lemon juice
2 teaspoons red wine vinegar
1 teaspoon ground cumin
4 green onions, chopped
   
1 red bell pepper, seeded and
chopped( I used tomato)
1/4 cup chopped fresh cilantro(I left this out)
1 cup frozen corn kernels,
thawed(or use one can drained)
1 (15 ounce) can black beans,
drained
salt and pepper to taste

DIRECTIONS:
1. Bring chicken broth to a boil in a 2 quart or larger sauce pan and stir in the couscous. Cover the pot and remove from heat. Let stand for 5 minutes.
2. In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. Add green onions, red pepper, cilantro, corn and beans and toss to coat.
3. Fluff the couscous well, breaking up any chunks. Add to the bowl with the vegetables and mix well. Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.

Quick and Easy Tater Tot Casserole

There are many versions of this recipe, but this is the best for quick and easy..a big hit with the kids

INGREDIENTS:

  • 1 pound ground beef
  • 1 16-ounce bag tater tots
  • 1 can cream of mushroom soup
  • 1 can of milk

PREPARATION:

Brown the ground beef in a skillet; drain and place in a casserole dish. Place tater tots over meat. Mix can of cream of mushroom soup and a can of milk. Pour this over the tater tots and ground beef. Bake at 350 degrees for 20 minutes.

Our New Homeschool Plan

Rod & Staff for:

Bible(included in their reading program complete with bible memory verses)(will be making a bible memory notebook)
English
Spelling
Math
Reading/phonics
science(daddy will be teaching this to them at night once a week)
Health one day a week

HWT Cursive(5-10 min. a day)

Story of the World Level One (2 days a week)will make their own history notebooks with this.

Sponge Bob Typing(keyboarding) in the afternoons for fun whenever.

a read-aloud from a classic book daily.

Hey, Andrew Teach me some greek alphabet..one letter a week

(these will be done on the 2 Tuesdays a month that Joe Works)

One of those Weeks

It has been "one of those weeks" around here..

First off My mother-in-law has possibly had a heart attack  please pray for her recovery. 

We had to take the camper to be fixed..thankfully it wasn't much, but the drive is 45 min. one way, and dh left the wheel there yesterday, so we have to go back and get it.

I have been pouring over curriculum and reading a lot.  There is so much I would like to do, but it is not possible, and Joe wants me to do what is best to help me as well as make sure they are getting what they need, so it looks like Rod & Staff for all subjects except history is the NEW plan~  I really like R & S and feel that they provided a solid education.

It stormed here and all of our Early Girl tomato plants were lost to the hail.  We do have lettuce ready to eat.

Well, that is how my world is spinning.  Hopefully thinks will slow down soon.

This crazy weather

I cannot believe it is 25 degrees tonight. We went  camping last weekend and it was in the 80's during the day   The girls and I had our Easter dresses all picked out, but they are sleeveless. We are having to drag out winter clothes to wear to church on Sunday.

It is supposed to be back up to 80 next week and I guess we will all be sick again ~ugh~

changed the living room and dining room

well, I had to have more space for schooling, so we moved the living room into the dining room and the dining room, school room, scrapbook room, computer room, etc. etc. into the living room. We have  a lot more space now and the room is multi-functional

We had a great time camping this weekend

The weather was great. It rained for just a few minutes Saturday night, but the ground was so dry, it soaked it right up and we got back out and built a fire.  We did the usual smores, hot dogs and grilled chicken. Why does everything taste better outside?  All I want to do is eat.

We discovered Disc Golf and will play that a lot more often, there are parks around here that have the courses to play on.

I got a lot of reading done. I read The Well-Trained Mind, The Well-Educated Mind and The Latin Centered Curriculum.  Betcha can't tell where our homeschooling is headed

We are all exhausted, but in a good way.

Going Camping

We are leaving tomorrow to go camping and returning on Sunday, we are all looking forward to getting away, and I LOVE to go camping, but I hate the packing and unpacking!!  We have a pop up camper, so it is not that bad, but packing clothes and food, and shower stuff, and homeschool books and stuff to play with for 5 people, it gets to be alot of stuff.

We always have a great time just being together and relaxing as a family, give me  to catch up on my reading .

I did go get a prescription for Singulair today, my allergies have been giving me fits and if 3 bottles of Children's Benedryl didn't help, I figured it was time to try something else.

Well I thougt the decision was made....

I came in a little while ago from going to dinner with a friend and dh had watched the dvd sampler from BJU I got in the mail today, he had only seen a little on the the computer. I have some Rod and Staff here, he says that he likes Rod and Staff better, and he started to feel convicted about the cost of BJU since we are starting Dave Ramsey's Money Program. We are trying to get out of debt.

I told him I would go with which every he thinks is best I thought I had peace about BJU but when I got up this morning after my prayer time, I wasn't sure again.

He thinks we should concentrate on the basics for a year and just read good books for history and watch our Moody Science Videos and talk about them..got them months ago and haven't watched them yet

so, it looks like we are going with Rod and staff for Reading, Spelling, English and math. We will do copywork books for handwriting.

 A couple of days ago, I had the kids watch the dvd sampler of BJU and then showed them the Rod and staff books I had, and they chose Rod & Staff !!  I got a Rod and Staff 2nd grade Math book in I had l already ordered and I LOVE IT!! So, I think we made the right choice now for our family.

We were just going to override their choice, but now we don't have to and I will be able to add in a few classical Education things I wanted to, but would not have doing BJU.

We want to do Hey Andrew, Teach Me Some Greek and learn some Latin Root Words, Study a classical composer and artist each quarter.

Ahhh...I mean Achoo! Spring has Sprung

Everyone around me is so excited about Spring arriving, the garden is being planted, the kids are outside playing in the sandbox and riding their bikes.

The weather is pretty and warm, and I am miserable  with allerigies..I suffer from what they used to call "hay fever" and the pollen count here is TERRIBLE!!

So, I love Spring and I hate Spring, and I won't be able to breathe again until the middle of June, and then I will have a brief reprieve until the Fall Ragweed starts~ugh~

The Curriculum Roller Coaster

After much angst and searching and lots of prayer, we have decided to go with BJU Homesat next year..I  am excited to finally have a decision made. The expense scares me a little but Joe says the money is not the issue, it is what is best for  the kids and for me. You name the method or the curriculum, I been there, done that, and bought the lousy t-shirt

I know without a doubt in my mind that we are doing what the Lord would have us to do, in homeschooling our children with their backgrounds and special needs it is what is best

I don't always enjoy my kids 24-7, but I love homeschooling them, it is a blessing and not always a joy, but for the most part, we have great days.

I have felt like a fish out of water for a while now, but I am praying that BJU Homesat will be a blessing to my family.

Changing the look of my blog AGAIN

I am just trying to confuse everyone  heck, I am confused myself..lol..I have been trying to set up a template that represents me, I think this is it..I Love Lucy, I have the complete dvd set of the series, a purse, a doll, a street sign, etc. etc.  and I just love the picture at the top of the blog with the Proverbs 31 scripture on it. I feel like Lucy alot of days, some of our days are crazy around here and I have been known to have some hair-brained ideas

My ultimate Goal is to be a Proverbs 31 Woman, I am no where near, but I try to  work on it daily. I always keep these scriptures in my mind and remind myself of them when I am failing.  I wll never be perfect but If I could reach the goal of being a proverbs 31 woman, that is a legacy I would be proud to leave behind.

Hopefully I will be satisfied for the time being and leave the template alone. but then again, you never know!  I am one of those people who actually like change..keeps life interesting..

We Finally Did it..No Satellite

We  finally did it. We turned off the satellite today. After two years of not listening to the Lord, we just couldn't ignore his voice anymore. We have an indoor antenna, and we can get most of the local channels.  Hubby and I aren't quite ready to go "No TV", but baby steps right. The kids will be watching dvd's for the most part and they are fine with that. 

While I was gone today for an hour my kids stayed at their grannys and I got home and they said that my son had said the bs word twice.  I asked him where he heard that and he said on a commerical while watching cartoons on Boomerang  

I said that I had never heard anything like that on there and if he wasn't telling the truth to come forward now. DJ stepped in and said "He is telling you the truth, I heard it too !

This makes me so angry and sad, but what it did was confirm to me what the Lord has been telling me for a long time.

What's funny is that I was gone to Wal-Mart to buy the Antenna because we had already decided to turn the Satellite off, and the incident with my son happened while I was gone to buy the Antenna.  Isn't God good

My Bargin Find of the Year!

I found four roman shades at Wall's Discount Store (for those of you that don't have one, it is rejects and mis matched stuff from many other stores, they never have the same things).

I got four natural colored Levelor Roman Shades for my living and dining windows at 80% off the regular price which was $52.99 each and I paid less than $50 total for all four. So, that's my bargin of the year probably.  Don't cha just love a find like that?
