Warm Noon Meals Hit the Spot:)

   Well, a nice warm soup sure hits the spot on a cool day:)

   It's a family favorite and well worth the wait:)

  

   Chicken and Dumplings!:P

Take as much chicken as you think feeds the family and place in pot. Cover generously with water. Sprinkle generous amounts of Parsley, Sage, Rosemarry, Thyme and a bit of sea salt. Cut a whole onion into large pieces and toss in. Also cut up several small/medium sized potatoes into bite sized pieces and throw those in. Any other long cooking vegetable can be put in now as well like carrots, celery etc.

   Set burner to medium heat and let it cook down till the chicken falls off the bones. This will take several hours. (I start cooking early in the morning and estimate the time to be about 6 hours from start to finish). When the chicken is cooked off the bones remove bones carefully.

   Be sure to stir the soup now and then to keep it from burning to the bottom of the pot. You don't want to stir the burn up into the soup.

   At the last 20 minutes make your dumpling dough and drop in generous lumps, cover and simmer for 15-20 minutes (or until dumplings are cooked through). When making our dumplings we always put in a small amount of sage, rosemary, a pinch of oregano and paprika.

   So that's our cool weather noon meal:P

Can I come by for lunch? Oh my gosh that looks so good. My family doesn't eat dumplings unless they are covered with blackberries. I on the other hand love chicken and dumplings, but since I'm the only one who eats them, I never fix them. It's a good thing I don't fix them too, because I could eat the whole pot, lol. ..........Kitty
