Be Ye Separate

A family favorite

   It's been a few day since I've had the chance to sit down and do any writing so I thought I would steal a moment while I am feeling fit enough to sit up:) I've been under the weather here but, as usual, it's just another season to work through:)

   The girls made a wonderful supper that is quick, easy, inexpensive and a family favorite:)

Ignore the silly glasses (the whales)...they were a dollar store find way back when we were starting over after an issue that happened at our home one winter. Long ago and over, these silly tumblers have outlasted anything I've tried to replace them with:P

This is a Bruschetta we make with chicken. You can substitute turkey if you like.

Reciept:

1 (14oz) can dices tomatoes, undrained

1 package stove top stuffing mix (chicken or turkey) We use an organic brand

1/2 cup water (I use base for more flavor)

2 cloves garlic, minced (I use a LOT more...you can never have too much garlic:P)

1 1/2 lbs boneless chicken, chopped in bitesize pieces

1 tsp dried basil

1 cup mozzarella shredded

Preheat oven to 400F. Put tomatoes in bowl and add stuffing mix, water and garlic. Stir until stuffing is moistened and set aside.

Cover bottom of 13x9 baking dish with cut up chicken, sprinkle the basil and cheese over the top of the chicken and cover all with stuffing mixture.

Make 30 minutes or until chicken is cooked through.

Serves 6 (don't you believe it:P)

We double this receipt for our family. We do have all teenagers at home now so maybe that's why it won't feed six:P

Served up with a nice salad, bread/butter/jam and if you like you can add a side vegetable. We often have both but sometimes a salad is all we want:)

Nothing wrong with your glasses at all! I love getting things that we need from dollar stores and such. No need to pay top dollar for evey day things we need. ~~ I do love that solid blue glass sitting there. Is it a canning jar? We do use those to drink out of sometimes.

~~~Glass doesn't last long around our house and I don't like plastic for health reasons, so I really didn't think these would last long...they've survived us almost 4 years now! No sooner do I think I've seen the last of them, they are unearthed from out in the yard and wash up well:P
The blue ones are actually a mason jar with a handle that I purchased at a place called The Cash King which is sort of like a dollar store (I paid a dollar each). They are wonderful and I have canned in them now and then for gifts. It says not to but I don't hot bath my jam so I don't worry about cracking them:)

I Love the glasses! It think that it is things like that at the dinner table that make a house feel like home.

~~~I admit they were fun to have around the pool this summer:P They seem to be the only ones that haven't been destroyed and since I don't want to waste anything, here they stay:P

~~~It is so easy and everyone really liked it. You can always add extra spices or less depending on your taste.
And thank you...the whales do start to grow on you after awhile:P

And the glasses? Seems that all of mine need replacing every 3 months or so. I just bought some more at the Dollar Store a month ago. Waiting for them to start breaking or disappearing! LOL!

~~~I can only think that buying hideous (but fun looking) glasses are the only way to insure they won't get broken:P It seems to have worked for me:D

After the food, the glasses were the first things I saw, lol. Too cute and the dish looks like something I will give a try. Im always on the lookout for something new around here.

~~~I have learned an awful lot over the years about making easy, quick and complete meals with such a large family. In fact, I'm having trouble learning to cook smaller now that we are seeing our children move on :P
I've nearly given up trying to replace those glasses. They seem sturdy enough. I just wish they had been clear:P
