Velvet's pet Rooster, Lil Red.

Wonderful day out today. We planted 15 pounds of seed potaores and 200 onion sets. I have the blisters to prove it! Should have worn my gloves. Velvet and I cleaned out the bunny barn. Took a few pics of our favorite bunnies!

This is Harley, he is a harliquin mini-lop and quite a sweet little guy.

This one belongs to Velvet, he is Benjamin Bunny. Wasn't to fond of having pictures made.

We have 11 new peeps.

All in all it was a great day here at Grrandma Rosie's Texas Home.

Beautiful day here at Grandma Rosie's. Lots of rain yeterday, but sunshine and in the upper 70's today. We are all out working in the yard. Doug is home, Velvet is sitting outside doing Homeschool, dad is working on our new chicken coop! I am a happy Grandma. I am planting potatoes and onions!! This is the day I have waited for all winter.

I am so far behind in cleaning and laundry it is making me nuts! Not only that I am behind in my gardening also. What a strange winter we have had.

I Think I need to Split my Hive This Year............

My top bar hive is getting crowded. I am pretty sure it is time to split the hive. I have anoter top bar hive ready. But I have never tried to split a hive. Anyone have any advice for me??



CHICKEN TORTILLA CASSEROLE

CHICKEN TORTILLA CASSEROLE

1 1/2 to 2 lbs. Boneless chicken breasts, cut in strips
1/2 c. Onion, finely chopped
2 tbsp. Oil
1 clove garlic
8 oz. Salsa
4 c. Cold chicken broth
1/4 c. Parsley
3 tbsp. Corn starch
1/2 c. Sour cream
1/2 c. Mayonnaise
6 oz. Shredded Jack cheese
12 (6 inch) flour tortillas

Saut?in oil: Chicken, onion, garlic, set aside. Bring to a boil chicken broth and corn starch and cook 1 minute. Add cheese sour cream, mayonnaise, salsa and parsley. Combine 1 cup of sauce with the chicken mixture. Spoon mixture into tortillas and place seam down in baking dish. Pour remaining sauce over tortillas and sprinkle with remaining cheese. Bake at 350 degrees for 20 to 25 minutes. (2 pans may be needed).

Chicken Fried Shrimp
In Texas we have chicken fried steak and chicken fried chicken and now: chicken fried shrimp. We were trying to come up with a nice crunchy breading for our shrimp and decided to batter it the same way we make fried chicken. It was a success-thick, crunchy breaded shrimp!
Serves 6

• 2 lbs shrimp, thawed, peeled, and de-veined
• 2 cups flour
• 1 tbsp salt
• 1 tbsp garlic powder
• 1 cup buttermilk
• 1 egg
• 1 tsp baking powder
• 1 scant tsp baking soda (about 3/4 tsp)
• peanut or other oil for frying

1. In a medium bowl stir together 2 cups of flour, salt and garlic powder.
2. In a separate bowl or measuring cup, use a fork to stir together buttermilk, egg, baking powder and baking soda until foamy.
3. Holding a shrimp by the tail, coat first in flour then dip in buttermilk mixture, then coat again in flour. Place shrimp on a plate. Repeat until all shrimp are coated.
4. Heat oil in a pot or deep fryer to about 350°F.
5. Carefully and quickly add shrimp one at a time to the hot oil. You will need to do this in several batches to keep from over crowding your oil.
6. Fry shrimp until breading is golden brown and shrimp are cooked all the way through, about 2 min depending on how hot your oil stays. You can always scoop out one shrimp and cut it in half to see if they are cooked all the way through yet.

Serve with cocktail sauce and French fries or hush puppies and biscuits.

It has been a bit since I last posted.. and I was pretty much overwhelmed at that time.  Things are looking up, course its hard not to feel fairly good when you have a beautiful warm spring day  to be joyful in.   Its hard to beleive they are forecasting snow for tomorrow  lol.. but they are...

DH's back got worse before it got better.. finally a trip to the ER got things moving...  and the final diagnosis was a compression fracture in one of his vertabraes.  He is doing well now and back at work.. other then an occasional stiffness he seems to be on the mend..  In fact today he is up combing the hillside looking for morel mushrooms..  we have had an unseasonably warm winter... well we actually didnt have much of a winter.. but anyway they are popping out .  As he went out the door he left instructions to get steak out as he was planning on finding a boatload.  lol...  I dont expect to see many mushrooms.. but I do have some dehydrated ones on hand just in case  lol.  

Sherell is doing great at school but it has been a rough term... LOTS of writing... but even so it looks like she might end up with another  4 point term... I am so proud of her I can't even express how much...  She is enjoying living on her own and seems to have some  roommates that are just as level headed as she is... what a blessing for her and them....

The hens are laying an abundant supply of eggs now... and we have had many folks interested in buying them... I am still not sure about a garden this year.. but maybe with the new dog around the deer will steer clear of it...

The dog is really just a pup.. he turned 4 months yesterday.   What a source of joy and aggravation he is.. I dont know when I have laughed so much at a little critters antics.   although the other morning I was far from laughing... we woke to a heavy rain, more like a downpour... I let him out so he could take care of business.. he went out long enough to pee and that was it... there was no way, no how he was going back out in that rain to finish.   He ended up messing on the floor....I was not pleased!   I decided since both tanks must surely be empty it was safe to take a shower.

As I was soaping up I heard a thump on the shower stall door.. and when I opened it, who should be looking back at me but the little mutt,  I opened the other side so he could peek in if he wanted.. and proceeded to finish my shower.... the next thing I knew the little termite was in the shower with me.... Cant go out in the rain.. but the shower.. no problem lol

he is growing like a weed... he was 11 lbs 7 weeks ago.. now he weighs in at a whopping 25+ lbs... the other day I had to take him in for his last puppy shot., they want you to hold them while in the vets office...  it was about  like holding onto 25 lbs of excited jello.... This pup seems to love everyone.  lol   Here are a few pics of him . We beleive he is a lab boxer mix.
