Indian Tacos made with whole wheat Fry Bread

I live in Oklahoma where Indian tacos are sold at all kinds of events and entertainment -they are so yummy! We make them fresh at home on occasion as they are fried (I use canola oil) and not completely heart healthy. I had a friend that was Papago indian that once made these for lunch for an entire school of 300 -I think I will just stick to my family. Here is the recipe for the fry bread, once it is done you add some beans, some people add taco meat, then lettuce, tomato, onion and salsa -we like a bit of Ranch dressing on ours. I used soft whole wheat flour in place of white.

Fry Bread

2 cups flour

2 tsp. baking powder

1/2 tsp. salt

1 cup warm water

oil for frying

Combine ingredients. Knead until soft ball forms. Divide into 8 pieces. Roll out until about 5" circle. Fry in oil until light and fluffy and turn over and fry until lightly browned. Cool on paper towel serve as fry bread or fix as indian taco.

Isn't this much like a tortilla? I wonder if you could cook them on a griddle without the oil? I might have to try this!

here in Utah, we call 'em scones. ( i dunno why, but we do.....) I love these, although I haven't made them since my dh accedentally caught my frying/oil pan on fire. although, that did give me a new paint job in the kitchen and living room......
