Orange Kiss-Me cake

   I changed it up a bit with fresh milled soft whole wheat and if your family doesn't like raisins -don't be scared off because you see them in the recipe because they will be minced along with pulp,peel and nuts and added to the batter. YUM!

This won the New York City Bake-Off, in 1950 by Mrs. Lily Wuebel -isn't that too cool?!

Orange Kiss-Me Cake

 

 

Ingredients:

Cake:
1 orange
1 cup raisins
1/3 cup walnuts
2 cups soft whole wheat flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup milk
1/2 cup butter or margarine, softened or shortening
2 eggs
Topping:
Reserved 1/3 cup orange juice
1/3 cup sugar
1 teaspoon ground cinnamon
1/4 cup finely chopped walnuts

Directions:

Heat oven to 350 degrees. Grease a 9 by 13-inch pan with shortening, then lightly flour. Squeeze orange, reserving 1/3 cup juice for topping; remove seeds. In a blender or food processor bowl with metal blade, grind together orange peel and pulp, raisins and 1/3 cup walnuts; set aside.

In a large bowl, combine flour, sugar, baking soda, salt, milk and butter; beat with electric mixer on low speed until moistened, then beat on medium speed 3 minutes. Stir in orange-raisin mixture. Pour batter into pan.

Bake 35 to 45 minutes or until a toothpick inserted in center comes out clean. Drizzle reserved 1/3 cup orange juice over warm cake in pan.

In a small bowl, mix 1/3 cup sugar and cinnamon. Stir in 1/4 cup walnuts; sprinkle over cake. Cool completely, about 1 hour.
