Mexican Fruit Cake recipe (with fresh milled wheat flour)

This is a great cake served at some fine places like Green Gate Village Historic Inn, but I got the recipe from my sweet sister in law who makes this for us on occasion when we visit her. It is really yummy. I substituted soft whole wheat flour for the white flour and it came out beautifully!

 

 

Mexican Fruit Cake

 

2 cups soft whole wheat flour
2 cups sugar
2 tsp baking soda
2 eggs
1- 20oz can crushed pineapple
1 cupchopped walnuts

Mix all ingredients together until well blended. Pour into greased cake pan and bake aat 350 degrees for 40 minutes. Frost while hot with the following ingredients blended until smooth:

1- 8oz pkg cream cheese
1 stick butter
1 tsp vanilla
2 cups powdered sugar
