The best Salsa you ever had....Here we are making the best salsa you have ever had. We canned ours but you can always freeze it if you want to. We made a batch and a half and we got 10 pints. It sure is good! Cut a big X on the bottom of your tomatoes, drop them in boiling water for 1 minute then emmerse them in ice water. You then can peel them faster than 2 shakes of a lambs tail.
Chop and prepare everything on the list (recipe to follow) and cook it for 10 minutes.
Make sure to grab your hunny to help you ( threaten to withhold the tortilla chips) if he gives you any gruff, put him on the garlic ....hee hee hee (complete concentration always helps me too Frontier Man...) I hope you have a daughter that will come in the middle of it all with some flowers for you, it makes the mundane chopping sooo much easier
And when all the chopping, cooking, dishwashing, sweeping, and sweating is done, you are left with these pretty jewels.
Wonderful Salsa 3 -6 quarts or pints 8 cups tomatoes, peeled, chopped and drained 2 1/2 cups onions, chopped 1 1/2 cups green peppers (I used all 3 colors) 1 cup jalapeno pepper, chopped (or any kind you prefer) 6 garlic cloves, minced 2 teaspoons cumin 2 teaspoons pepper 1/4 cup canning salt 1/3 cup sugar (about half of this I used) 1/3 cup vinegar 1 (15 ounce) can tomato sauce 1 (12 ounce) can tomato paste 1 Cup chopped cilantro 2 limes, juiced Mix all together and bring to a slow boil for 10 minute. Seal in jars and cook in hot water bath for 10 minute. This is a medium salsa. This is also a chunky salsa so if you want a smoother salsa cut your veggies into smaller piecesor run through blender. { Last Page } { Page 69 of 368 } { Next Page } |
