Basic Taco/Fajita Seasoning
Combine all ingredients. Darn good chicken fajita'sThis is how we make chicken fajita's. I like to boil or grill 3 boneless chicken breasts until almost done (they will finish cooking in the stirfry) because I think cooking them solely during the frying time is too much frying the peppers. Cool and slice into strips. We make up our seasoning mix (for heaven's sake, make your own as the store bought kind is yucky and expensive, click here for the best mix that I use) and set it aside. First we chop strips from 1 red bell pepper and 1 yellow bell pepper and 1 purple onion. Cover the bottom of your heavy frying pan with olive oil and then add a teaspoon of your garlic paste or fresh garlic, minced. Add the peppers and onions, chicken, and seasoning and cook 5 or 10 minutes until your desired taste is met (some like fajita's almost black) Pour it into a platter and serve with Jill's salsa and sour cream on fresh flour tortillas and don't write to me and complain that you over ate because you WILL over eat on these every time! I'm thin, I'm thin, I'm finally thin.....okay, I'm not, but this mirror kinda made me look l-o-n-g and thin. Here are some pictures taken on a recent field trip to the children’s museum. Homemade Enchilada Sauce
Drunken BeansDrunken Beans
1 lb beans of choice -- pintos, cannelini, romans, etc., soaked in boiling water for a few hours or overnight garlic (alot) jalapeno, at least one, chopped 4 slices thick slab bacon one bottle of beer one 14 oz can diced tomatoes one tsp cumin Cilantro, salt, pepper, and a sluice of vinegar Brown bacon in skillet, remove and reserve, pour off most of the fat. In remaining bacon fat, sautee garlic and jalapeno. Return bacon to pan, add beans, beer, tomatoes, and water to cover by about 1 inch. Cook until tender, about 90 minutes, or about 5 minutes in a pressure cooker (can you see that I love kitchen gadgetry??). Add cilantro, salt, pepper, and a slug of vinegar (balsamic is great with beans). Butterscotch Apple Pecan CobblerButterscotch Apple Pecan Cobbler 1 (12 ounce) package nestle toll house Nestle Toll House butterscotch-flavored morsels (2 cups) 1/4 cup brown sugar, firmly packed 1/4 cup all-purpose flour 1/2 teaspoon cinnamon 2 1/2 lbs tart apples, peeled and diced Topping 1/2 cup all-purpose flour 1/4 cup brown sugar, firmly packed 4 tablespoons butter (1/2 stick) 1 cup pecans, chopped 3/4 cup quick oats or old fashioned oats, uncooked Preheat the oven to 375. In a small bowl, combine butterscotch morsels, brown sugar, flour and cinnamon; set aside. Place apples in a 13x9 inch baking pan-sprinkle morsel mixture over the apples. Bake for 20 minutes. To make the topping, combine the flour and brown sugar; cut in butter with pastry blender or two knives till mixture is crumbly. Stir in pecans and oats. Sprinkle over apple mixture. Bake 30-40 minutes or until apples are tender. Serve warm with vanilla ice cream or whipped cream. No internet...have internet...no internet...Howdy out there.... My heaven it seems like its been a while. Well, I guess it has really been a week or so and here is the reason. Our internet provider's tower was hit by lightening which took it down for a few days and then my oldest son thought he could get his laptop up on running through the router after that and now no-one has internet here at the house! Yes, I could have killed him, but he has since confessed and asked forgiveness and so what can we do now but wait for the unfailingly unreachable extremely busy and can never be reached internet techy to come and get it all straightened out. The only reason you see writing here at this point because I decided to zoom up to the local corner store that has free wi-fi to do a few things online and post this . So, I am not sure how long before we are back on-line, but hopefully soon. I visited Pianomanjess and Grand-doll Mom and of course Grand-doll the other day. All seems well with them and future The Little seems to be on time and will arrive in July. I had a dream she was a girl this time and they named her Nigh -too funny huh? Grand-doll had picked out the name her mom said. Here we are at Inner Urban having lunch:
On the way home I passed a big truck and it threw a few pieces of gravel on my window, one wich happened to chip and crack it. It is now a long crack on the drivers side.
College Son will graduate tommorrow and we are all excited for him. I will post some pictures of his graduation soon and let's not forget Big Miss is right behind him and will graduate in 2 weeks so we have been busy preparing for her special day! We are still eating at "different and cultural diversified" food establishments, even though I may fail to mention it. This week-end it was a place called Panda Garden and we had mongolian BBQ. Sound strange? Was it ever good and so much fun to watch it prepared. You choose the raw ingredients and pile it an a big bowl and give it to the chef who sautee's it on a big heated stone, adds garlic and seasonings a a little "hot" if you want. We really enjoyed it and had nice company as Full House Mom waent a long as Full House Dad is in Australia still and will be headed back Sunday. But I would like to say "Happy Birthday" to her and I hope you all have a great week!
Tillin' and the hay loftHowdy out there to you. Whew, we have had a busy week-end. We finally have the garden ready and what should happen? Cold weather. Oklahoma cold weather is what happened. Oh well, the soil is ready and we will plant as soon as it is warm again.
I did get my herb tires planted. Basil and cilantro and Little Miss planted flowers and sunflowers. I transplanted some mums and got the thornless blackberry staked as well. The strawberries are loaded and I hate the thought of transplanting them but they have outgrown their place too.
I have been doing a few outdoor projects. The faucet flowers are done and I am also getting my lavendar spindle tea pot bird feeder put together. Here is a peek at the projects...
I am reading "World Without End". It is the sequel to "Pillars of the Earth" by Ken Follet. I am also reading "Mere Christianity" by C. S. Lewis for the womens bible study that I am in. It seems I only get to read several pages at a time because of all the things I have to get done and so at this rate I figure I will get this 1000 page book read, by ohhh, say January 2009. Last New Recipe Thursday was a hit. Italian Meatloaf. Frontier Man loved it and ate it for 2 days and wanted more. This week it is a new recipe called "Potato-Rosemary Pizetta". Big Miss has informed me she will be taking over Monday night meal so that will be nice. Have you ever climbed a mountain? A mountain of hay bales? I remember as a young girl how I loved to climb those hay bales too. We lived on a dairy farm so there was always plenty of hay in the barn! It can be sooo fun and on a recent trip out to moms little farm, that is where the kids had the most fun, up in the hay loft in the barn. Fun to hide in them but it can be a bit scratchy though. Sometimes you can find fun and interesting things. Like
My dad is a race car driver. There... I said it. That is my confession and now you know the nasty habit....He drags at Ardmore Raceway near Springer. It is the oldest continuously run drag strip in the U.S. and he lives for racing. I believe, literally. He had open heart surgery and for a few years got out of the circuit and was not the same. Now he is back and he is much more like his old self....
He also spent 2 years rebuilding this 58 chevy. Can you say Pride and Joy?
Speaking of cars, College Son's car decided to quit. Yes, permanantly with 3 weeks of school left. He blew a head gasket and nothing can be done at this point. Well, something can be done but at a tune of fifteen hundred dollars.... He decided for that amount he would just buy another car, and so, taking almost all his savings he purchased another older car in hopes to make it on down the road a few more miles. With cars, sometimes it just happens... and it sure did this time! Well that is about all I have time for this morning.... breadmaking today. Have a nice day!
